  3. Culture? Don't point with chopsticks when speaking. I know you're Italian and like to express with your hands but it's no different than someone using the fork to do the same.

Tapioca is a starch extracted from the tubers/roots of the Casava plant and has almost zero nutritional value other than carbohydrate, but as a fine flour it is used as a thickener which thickens at a lower temperature than corn starch or flour, and results in a glossy and clear sauce. My local oriental market carries it and I almost always have, tapioca starch/flour, corn starch, rice flour, potato starch and arrowroot in my pantry. Tapioca can be used at the very last minute even when the fire is turned off under a soup or sauce, to thicken without giving an overly 'floury or starchy' quality to the sauce or soup, and as previously stated, the liquid remains clear and glossy. Corn starch must be cooked/simmered to thicken and to cook off the 'starchiness' and although it gives a glossy sheen to a sauce or soup, it also makes it rather opaque/milky. Flour/Roux must be cooked down even longer than corn starch, makes an even more opaque sauce/soup, and in the case of a roux, depending on the amount of coloring during cooking in oil/butter of the flour, also contributes its own toasty flavor which must be taken into consideration as it will significantly alter the flavour of your broth/soup/sauce depending on how dark a roux you make. Arrowroot has at least double the thickening power of flour so you will need much less when thickening, and unlike other starches, it withstands acidic sauces/broths/soups which break down the bonds made with other starches.

  5. Jessi, hold the chopstix 3/4 of the way out, not in the middle.
    You want torque.
    Like an old school weighing scale or seesaw.
    The noodles will be heavy on one end, so your hand/fingers have to be on almost the other end to pick it up effortlessly.

    The bun is not trad jap. It's called bao.
    Shoyu ramen is soy sauce based.
    Oh, wait till you try miso ramen, tantanmen, jap curry udon, zaru soba, tsukemen… 🤤
    And japanese cheesecake. 😇

  7. Pls find a small ramen joint owned by a japanese with a japanese chef or cook. Doesn't have to be fancy. Find a mom&pop shop. Or just go to japan! 😁

    And the cookies there..
    There are also legit italian-trained japanese chefs there. And italian chefs.
    The standards are high.
    But also the price.
    Bec italian cheese is expensive in japan.

  11. Come to Japan and have Italian pizza in Tokyo. It will blow your mind. Every time I take an Italian to this restaurant, they say it might be the best pizza they ever had

  12. My favorite Japanese cartoon is Sailor Moon, hands down. It introduced me to anime as a teen and it gave me something to have in common with my future husband when we met. Two kids later and we are an anime-loving family! And Asian food is also our favorite 🙂

I'm sure they would have been happy to explain, and then you would not be poking at things and asking what they are and already setting yourself up for a negative reaction. Or was part of the challenge to simply go in blind?

  15. Japanese noodles are not pasta. They are not made with eggs. By themselves they are bland. It's the broth that infuses flavor.

  16. Seeing a ramen restaurant sell bao and bubble tea is like seeing a pasta restaurant sell ratatouille and macaron. Sure, those foods are from around the same region with the same lineage of cooking traditions, but it just doesn't feel right.

  18. Alessio eat some food! Not only italian, im from poland i eat polish food but also mexican tacos, mole fajitas, italian pizza, carbonara, bolonese, indian korma balti jafrezi, new orleans jambalaya, paella from spain and more

  20. So glad y'all tried ramen. It's comfort food for me. Gotta try bao with pork belly next time. It's so much better. Kudos on sticking with the chopsticks. It helps if you position your grip closer to the top end, further away from where it touches your food. It keeps it from criss crossing so much like scissors, with top one stationary(held by thumb & pointer) & bottom resting on pads of middle & ring fingertip. Practice often.

  21. Is Ramen better than Italian food? They don’t even compare, they are absolutely nothing alike. They are completely different experiences and flavors. Glad y’all enjoyed it. Ajitama (the egg) is my favorite lol

  22. You need to slurp ramen noodles. 🙂 Jessi's form is actuary correct. Alessio is correct those thin pieces are mushroom (wood ear).

  23. BTW. Pearl Teas actually originate from Taiwan. The Bun (bao) dish is mostly Hong Kong in origin.

    and I loved to watch Mila and Perine .

  25. Ahhhh I love it when Amore says "10 of the 10". I cracked up when he was handing you the fork "You need the fork? The Shame, the SHAME". Another great food experience team, and so happy you enjoyed the ramen and sides. Maybe you need to go to Japan to experience the authentic ramen. And I love how you got the last word in Jessi Amore, absolutely hilarious!

  26. Looks very good but if it's possible come to Japan and try the real lamen and the real sushi. There are so many foods and because the yen is undervalued against the dollar, prices are very reasonable!

  27. I don't want to offend anyone, that that looked like mediocre ramen at best. It's possible that it tasted good, because even average ramen can taste good or even very good. Also the presentation was not what you would expect from a good ramen shop. To go from an average to an excellent ramen, you need a lot of attention to details. Could it be that this was a restaurant of a chain, or something like this? I was also surprised that you said the ajitama (ramen egg) had little flavor, because a good ajitama has tons of flavor. Maybe this egg has not been marinated long enough?

  28. I'm asian. All noodles are awesome. It depends on my mood which one I choose. Ramen, pho, tomyam, pasta, lomein, etc if prepared fresh and correctly, can be great.
