Today on The Bates Kitchen, I’m in the kitchen with my sister Michael, @KeilenCorner who is a pro at feeding a crowd! Growing up, Michael could whip up a meal for 30+ people in an hour, and this lasagna is one of her go-to meals. Fast enough to throw together in time for dinner (boil regular lasagna sheets) or perfect to stash a few in the freezer for when needed (use the oven ready sheets and water the recipe calls for). This is also the perfect recipe to give to someone if you are the kind of person that takes meals to families when sick or after a birth etc, you can put it together and they can cook when they need! It’s hearty, comforting, and perfect to make ahead for busy weeks or big family gatherings.
We’re layering rich red sauce, a creamy cheese mixture, and oven-ready noodles to create a lasagna that’s both easy and delicious. Whether you’re feeding a crowd or prepping for the week ahead, this recipe has you covered.

Red Sauce Ingredients:
• 1 lb ground beef
• 1 lb ground turkey sausage
• 132 oz jar spaghetti sauce
• 2 tsp minced garlic
• 1 onion, diced small
• 2 tsp oregano
• 2 tsp basil
• 1 tsp Italian seasoning
Cheese Sauce Ingredients:
• 32 oz cottage cheese
• 2 eggs
• 1/2 cup Parmesan cheese
• 1 tsp basil
• 1 tsp oregano
• 2 tsp Italian herbs
• 1/2 tsp minced garlic
• Salt, pepper, and red pepper flakes to taste
Other Ingredients:
• 1 box oven-ready lasagna noodles
• 3 cups mozzarella cheese
• 1/2 cup water
Directions:
1. Preheat your oven to 360°F.
2. For the red sauce: Sauté onion and garlic until translucent. Add ground beef and turkey sausage, cook until browned, and drain any excess fat. Stir in the spaghetti sauce and herbs. Let it simmer on low while preparing the cheese sauce.
3. For the cheese sauce: In a large bowl, mix cottage cheese, eggs, Parmesan, and seasonings until combined.
4. Assemble: Layer red sauce, oven-ready lasagna noodles, and cheese sauce. Repeat until your dish is full, ending with a layer of red sauce. Top with mozzarella cheese.
5. Pour 1/2 cup of water evenly over the top (this helps the noodles cook perfectly).
6. Bake for 45-50 minutes, uncovered, until bubbling and golden on top.
7. Let rest for 10 minutes before serving.
*Michael normally rinses the sauce jar out with a bit of milk. If cooking in a hurry, pre boil regular lasagna sheets, omit the half cup of water, and reduce cooking time to 25-30 minutes!
Pro Tip: This lasagna freezes beautifully! Assemble it ahead of time, without water, cover tightly, and freeze. When ready to bake, thaw overnight, add water, and bake as directed.

I have a recipe that I have made for years for my family and it’s Called Spicy Potatoes! So good for a cold snowy day or rainy.. I have my own Chili recipe and dumplings… I will be trying this recipe, my daddy used all the cheeses lol..
I have been making lasagna for years but I’ve always been scared of the no boil noodles. I am definitely going to try them next time. Zach Redmonds salt is a total game changer, and if you are looking for a good flaky salt try Dalkin & CO its a great finisher. Another great video. Thank you for sharing 😊
Great video my wife and I enjoy the videos of the family cooking . I would like to know what knife was being used it the video ? Thanks
Can ricotta cheese be substituted for the cottage cheese?
I’m from Canada. We always did cottage cheese in lasagna. I was grown up before I realized ricotta was also used.
I always have used cottage cheese, I dont care for ricotta
Please keep cooking with your family members. It’s my favorite! You all are such a joy to watch. ❤
FYI… Michaela… I use cottage cheese too. Just a little trick. If you add a little mozzarella on each layer…it holds together when u cut it
I like to mix ricotta and cottage cheese. I always use the oven ready noodles. Love watching ya’ll!
Our son loves lasagna I’ll pass this on so when they make it I’ll get some . I had no idea the made oven ready noodles . I like mixing Italian sausage with the hamburger, I’ve never tried turkey sausage. That looks delicious Micheal and Zack . I watched all the party videos. They were great. Hate what’s happening with Alyssa and John. I’m always praying for of you .
I've used regular lasagna noodles the same way. I just make sure the noodles are completely covered with meat sauce or cheese and cover with foil. Bake it at 350 for 45-50 minutes
My mom always used cottage cheese in her lasagne. I do the same. and she would mix half cottage cheese and half ricotta cheese. Best lasagne l ever had. To me lasagne in most Italian restaurants are too sweet tasting.
Although the Best Italian restaurant in the Elks Plaza in Gatlinburg comes pretty close to how my moms tasted.
Love seeing Michaela join you.
I suggest a Bates cookbook with everyones. including your grandparents favorite recipe. maybe even a calender with a monthly recipe. ❤
That looks so easy and so delicious! Can’t wait to try it!
Here in Kent, England, my family makes homemade red sauce & as well as a white sauce (bechamel) with butter, flour & milk.
Oh my goodness! What a great dish! I have to try fresh herbs next time, it seems like it would be more flavorful. Cheese shredding tip: I never use pre shredded cheese, but I do use a rotary grater. So much quicker and they’re easy to clean. And no worries about grating fingers, so the kids can help. Not too pricey, either….around $30 and well worth every penny. You can use it for grating other things as well. Thanks for the recipe!
❤❤

Osso Bucco is made using veal shank. You can find it in the meat department
You 2 compliment each other so well! I use cottage cheese too. I much prefer it over ricotta.
Love watching the two of you interact with each other! More, please! This lasagna looks so, so good!
I use cottage cheese but I beat the cheese till it's creamy cause I'm not wild about the little curds , it makes me feel like I'm eating curdle milk wick in reality that's what it is but I just like the cottage cheese beat till creamy but that is the only thing I do different out side of I mix mozzarella with the cottage cheese also , like you said Zach you can never have to much cheese , LOVE y'all your the best love all your cooking videos and of course Mikaela is just so precious I love her to pieces …. Every family needs a Mikaela in their life ❤❤
Zach you should make that on Valentine Day or what y’all call it “ I Love you Day” for the whole family gathering
I could never miss a Zach and Michaela video! Can't wait to try this!
NO NEED TO BOIL LASAGNA NOODLES EVER AGAIN-
Our store charges much more for oven ready noodles so I found out you can use regular noodles in the same way as oven ready put them in uncooked then add more water in bottom of pan then seal it with foil and cook longer.
I use Redmond salt and I get it at Ingles grocery store
Happy New Year. Loved the lasagna and That is the first dish I learned how to do back when I was 16. I am in my 60s now. Blessings
