Chicken thighs are a wonderful cut for one-pot braising. They’re flavorful and juicy, very economical – and forgiving. A few extra minutes in the pan is not a big deal, because they’re difficult to overcook. Cerignola are large and meaty green olives with a mild flavor, making them perfect for a preparation like this, although you can use any large green olive here. If they’re very salty or briny, give them a quick rinse before adding them to the skillet. Delizioso!

i honestly find thighs the very best if not cooking a whole bird. i also like the fat. i buy them weekly – they are economical, easy to cook and have good flavour. it doesn't matter if one just fries them, oven roasts them or simmer in a sauce with vegetables – always delicious.

I like your channel and I consider you as a reference when it comes to Italian food, although I'm European, but that suggestion of cleaning anything that touches food with water with bleach in it is foolishness. Never in my life would I eat something that's been touched by bleach! I don't wanna get poisoned! During that covid era, governments, medias and social medias forced people to do and say things highly dangerous!
In terms of braising, the person could use a pressure cooker to speed up the process.
How does the skin remain crisp if the cover goes on for 20 minutes? Is their a way to crisp up the chicken at the end?

We love Chicken Thighs and Legs , The only time I use chicken breast is for a scaloppini or cutlets,
So this will be a go to Recipe for me to prepare instead of my usual marinated chicken breast in a pesto mixture.
