Ricotta Cheese Cookies
Ingredients :
1 cup unsalted butter (2 sticks)
2 cups white sugar
1 15-16 oz container of ricotta cheese
3 teaspoons of pure vanilla extract
1 teaspoon salt
1 teaspoon baking soda
4 cups of flour
For the icing:
1 cup powdered sugar
3-4 tablespoons of milk
Sprinkles
Directions:
Preheat oven to 350 F.
Parchment paper line a cookie sheet .
Cream butter with hand or standing mixer.
Add the white sugar and mix.
Add ricotta cheese and mix.
Then add the vanilla and baking soda with the salt; mix.
Add flour a little at a time mixing in between until dough forms.
Form little balls from the dough and put them on the cookie sheet (do not flatten).
Bake 10 -12 minutes or until the bottoms turn light golden brown.
Let cool.
In a bowl stir milk into the powdered sugar.
Spread over cooled cookies.
Top with sprinkles.
Store in an airtight container.
*Does not need to be refrigerated. You could also freeze half the dough and use up to about two months.
