You are supposed to move your fork to your right hand after cutting. And never put the fork in your mouth upside down. But, it's food and it's eating so who cares
Your demonstration was perfect. This is way of eating is easiest and displays the most elegance. (Switching from hand to hand every five minutes is not elegant.) Growing up with European family, this is how we were taught. In formal settings the way you eat shows your respect towards your host who has prepared your meal for you.
