how to make cartellate pugliesi, a traditional fried sweet pastry from Apulia and from Basilicata (where they are known as “casatédde”) in the south of Italy. It is typically prepared for Christmas festivities, and here is the original recipe. These pastries are thin and shaped like a rose, it is not too difficult to prepare them as shown in this tutorial, you just need a little bit of patience. Ingredients include flour, white wine and olive oil, and it is crispy fried in peanut oil.
It is typically toppec with “vincotto” (cooked moist of grapes), but also very common to cover with honey as in this recipe.

  1. These Christmas pastries from Apulia / Basilicata (Southern Italy) have a millennial history, in fact similar pastries appear on rock paintings from 600 years BC. Includes white wine & olive oil, crispy fried. Typically topped with „vin cotto“ (syrup made of fresh moist grapes from Southern Italy), alternatively topped with honey as shown here.
