Mac and Cheese (Inspo @tiniyounger )
Ingredients
* 8oz mild yellow cheddar
* 8oz sharp white cheddar
* 8oz smoked gouda
* 6oz gruyere
* 6oz sliced American cheese
* 1 lbs elbow macaroni
* 2 tbsp chicken bouillon
* 1 tbsp salt
* 3 tbsp unsalted butter
* 3 tbsp flour
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp smoked paprika
* 1/2 tsp mustard powder
* 1.5 cups evaporated milk
* 2 cups heavy cream
* Salt and pepper to taste
* 1/3 cup pasta water
Instructions
1. Shred all of your cheese blocks by hand and mix in a bowl. DO NOT use pre-shredded cheese.
2. Combine onion powder, garlic powder, smoked paprika, and mustard powder in a small bowl.
3. Bring 5 quarts of water to a boil seasoning with chicken bouillon and salt. Boil pasta for 6 minutes saving about 1/3 cup of pasta water.
4. Heat butter on medium low heat and toast half of the spices for 1-2 minutes. Once fragrant, add flour to make a roux and cook for a few minutes to get rid of the raw taste.
5. Slowly whisk in evaporated milk 1/2 at a time making sure there are no lumps. Once smooth, slowly add heavy cream 1/2 at a time. Raise heat to medium until the béchamel reaches a sauce consistency(coats back of the spoon and can draw a line with your finger).
6. Add the rest of the seasonings along with salt and pepper.
7. TURN THE HEAT TO LOW and add the American cheese a few slices at a time until fully melted followed by 1/2 of the shredded cheeses in batches. Make sure the cheese is fully melted before adding the next batch.
8. Turn off the heat, add the cooked pasta along with the pasta water and combine. Add any extra seasonings to your preference.
9. To a baking tray, add half of the Mac, followed by a half of the remaining cheeses. Pour the other half of the Mac, and top with the rest of the shredded cheeses.
10. Bake in the oven at 350F for 20 minutes and broil for an additional 5 minutes until the top is golden brown.

Im not a huge fan of oven baked pasta outside of a lasagna.
Id stop at the mixed all together goodness and just eat the whole pans worth.
For baking, why dont you try panko breadcrumbs over the top for a crunchy layer?
You can have lactose free cheese when you crave mac and cheese but you can spend some days in the toilet xD
Nice job on the bechamel – looks like it stayed thick and creamy instead of separating and leaving a layer of grease on top, like some of the recipes I've seen from other cooks.
For me, depends. I can have some cheese, like cheese and crackers or a little parmesan on my pasta and only have to deal with a little bit of trouble later. But milk and cream would straight up ruin my whole ass day.
Why would you bake it for so long? 10-15 minutes should easily be enough to brown the cheese.

Fun fact as a Dutchie: Gouda is actually often lactose free because of the way it's made!
For my fellow lactose-intolerant friends PLEASE for the love of all things holy and cheesy just buy some lactose pills. It will let you eat all the delicious dairy foods you love without having to suffer.
Just pay attention to the amount of Lactase Enzyme in each pill, Lactaid is very weak so if you're buying that one pop at least 2 of them with your dairy. Or just buy a better brand that's stronger, the one I buy has ~10,000 FCC/pill.

Dairy tortures me to such an extent I can't risk eating even a bit of it, but I'm happy for everyone who can still eat it every now and then with expected but controllable consequences 😁

I cut out 20% of the cheese and it's still absurdly cheesy!
