I’m confused. He’s redefined what Pizza can be, and he’s the ambassador of authentic Neapolitan pizza. Aren’t those two things opposites?
If i have learned anything while traveling it‘s this: If it looks half burned, the pizza guys have fat stains all over their shirt and there is a cook singing in the kitchen. Those are the best places.
