Ingredients:
Short beef ribs
Red wine
Fresh thyme
Bay leaves
Fresh garlic heads
Tomato paste
Pancetta
Cremini mushrooms
Fresh parsley

Seasoning:
1 tbsp black pepper
2 tbsp kosher salt

Directions:
Season ribs
Sear ribs
Fry tomato paste
Add garlic
Add ribs into Dutch oven
Add red wine
Add bouquet garni: thyme and bay leaves
Reduce red wine by half
Add beef broth
Braise at 450F for 2h

Fry pancetta and mushrooms

Strain garlic and braising liquid

Serve with pasta on the side
Top with pancetta and mushrooms
Pour garlic-wine sauce on top
Drizzle with fresh parsley
