Recipe:
200g dried spaghetti
4 cups water
500g tomato sauce/passata
2 garlic cloves, minced
2 tbsp dried chilli flakes
1/4 cup olive oil
Burrata(optional)
– mix the water with the tomato sauce. Blend if your tomato sauce is chunky
– sauté the garlic and chilli flakes in the olive oil over medium heat for 2-3 minutes. Add in the dried pasta and allow it to toast for 3-4 more minutes
– begin to ladle in the tomato stock, enough to cover the pasta, allow it to reduce and toast and char slightly
– ladle in more tomato stock whenever the sauce is almost dry. Repeat u til the pasta is softened and cooked through
– season with salt and finish with bursts if desired
