One Pan Shrimp Scampi

Recipe courtesy of my late father-in-law Dave Koutz.

Ingredients

1/4 cup finely diced shallots
3 tablespoons finely diced garlic

16-20 shrimp tails off, deveined front and back
4 oz spaghetti (or long pasta of your choice)

3 tablespoons salted butter
2 tablespoons olive or rice bran oil

3/4 to 1 cup of dry white wine.
1 lemon

1-2 teaspoons cajun seasoning (to taste)
Crushed red pepper (optional)

Pecorino-romano blend grated cheese to serve

Instructions.

De-vein the shrimp and take the tails off. set aside.
Heat large skillet or sauté pan (4 qt)
Add butter and oil to medium heat pan.
Add shallots and garlic and stir in pan for 30 to 45 seconds.
Add water to be able to submerge the pasta less than 1”
Boil for 5 to 6 minutes stirring the pasta as it softens.
Add white wine and some lemon juice.
Boil 2 to 3 minutes longer reducing the liquid until bubble are large and a little slower (indicating a thickening sauce)
Add shrimp and cajun seasoning or crushed pepper.
Cooking until most of the liquid is removed and the shrimp are cooked through – 2 to 3 minutes.
Add more lemon and taste the pasta.

Add any salt and pepper to taste.
Serve with pecorino/romano grated cheese and decorate with parsley if desired.
