  1. To each their own I guess, but I know Marco always make his risotto very wet. I have tried it, it actually gets less runny when it cools down to eating temperature. Man is an absolute genius.

    Immediate edit- I’m not super familiar with truffle oil but I worked at a restaurant that was kinda cheap and they used a very sparse amount of white truffle oil on their fries and the bottle was like 6 ounces (168 grams) and cost ~$60. To me this is like hearing “time to make microwave ramen, and if you wanna go that extra mile, top it with wagyu beef!”
