A few years ago, Eva and I traveled to the tiny Italian region of Molise and discovered an exceptional pork dish that I have been dreaming about ever since. It’s a very rare recipe that few Italians have even heard of, but definitely deserves much more attention.
We finally decided that it was time to try and recreate the recipe at home. There’s only one catch: Eva knew just as much about it as I did, and since I’m the “meat guy” in the household…

Il Molise è una bellissima regione. Siamo andati diverse volte in quella regione e fatto bellissime vacanze.

I've never found any difference between the garlic clove and its germ. Only if it's so old it is woody do I remove it.
For my pork ribs i use tons of paprika in the rub as well.

I haven’t seen this channel in almost a year and a half. Eva looks and sounds tired. Seems her heart isnt in this anymore (?).
Ok, I made this, and went straight to sandwich mode with it. Toasted kaiser roll, thin smear of mayo, drizzle of Franks wing sauce, lacking white vinegar I added a few dill pickle slices. and Damn.
All of the times that Harper's Dad has appeared on the channel …. I've never thought that they look much alike but with that clip when he was younger … I totally see it now 🙂

19:50 Sorry Harper, I was with you on this one until I recently heard someone point out that if it was “MICK” Donald’s, then people would say, “Hey, let’s go get a Big Mick sandwich!” It would be like calling your signature sandwich the “Big Hirp”
