Join me as I take you inside one of the most interesting places we’ve seen yet.
A 3 Michelin star restaurant, inside a former women’s prison.
This is De Librije.
It’s The Netherlands’ only 3 Michelin Star restaurant, a distinction they have had for 20 years.
The head chef and owner is Jonnie Boer.

My name is Alexander. I’m the co-owner of a ONE Michelin star restaurant, and I’m on a mission – to find inspiration in gastronomy. I love fine dining, good wine and sharing what I know with other people.

  2. One bottle of wine being half of your bill is crazy! And also the bottle of Krug that is more expensive than two menu’s is nuts. But if you can afford it and you really enjoy rare wines: why not? Great video!

  3. I wish you could have experienced Sergio Herman at his pinnacle. His food would have been 6 stars compared to this. But Jonnie & Thérèse are for sure a dream team couple

  4. I just got my stepmom – who is an amazing amateur-cook, and I mean that because I've known her for 52 years – addicted to your channel. Actually, she doesn't frequent M-star restaurants that often anymore – although she could – because she's been disappointed too many times; bluntly saying "I can do better than that myself". Gotta love her. 😎

  5. I don’t like people convincing me their food is good with the overbearing exposition in these restaurants. Let me look at the menu, serve it to me and bugger off. I know it’s supposed to be an ‘experience’, but anything fun in life is impossible to do in a suit.

  6. Thank you for wasting a shitload of money that you earned by doing literally nothing? Buying a restaurant. Proud of you. And you spit out fucking wine. Some person spent a lot of energy and time to make that. Wasteful person.

  7. 300$? lol what a scam, just go to a nice greek restaurant, u will get unlimited good meat for 60$ and spend 240 on fun stuff

  8. to clarify, they've had 3 stars for that long, but they haven't been the only 3 michelin star restaurant for most of that time. Owners of the others have decided to explore different ventures

  9. The price of the menu surprisingly affordable.

I would have guessed, itw ould have been at least 2-3 times that before watchinf this video.

  10. I went there after it got its 3 stars which is quite a long while ago. Prices then where absolutely reasonable from a local perspective, considering the amazing feast of a cuisine you were treated to. Unfortunately, for me it was a bit tough at some point. Opting for their offered menu of course and fish being an elemental part of fresh Dutch food I was inevitably going to have to taste quite a lot of it. Which unfortunately became a bit too much for me after quite a few sea fish dishes and I had to request a more meat-friendly menu going forward. So if you're not overly into fish be sure to let them know beforehand. But then maybe you have to ask yourself if it's worth going to a 3 star restaurant anyway. For me it still was, they adopted brilliantly and everything was top notch. Also they were very friendly, the nice chef and his lovely wife personally showing me around. Highly recommended.

  11. How do determine “great” vs “average” dishes? You explain it sometimes as boldness, but is that mostly in the flavors, presentation, or simply the ingredients used?
