Welcome Back to It’s Cooking Good. Today we cook up a really quick & easy classic Italian Chicken Recipe – Chicken Saltimbocca. A real favourite in our house not just because it tastes so great but because it is so time effective and uses such few ingredients. We start by butterflying the chicken breasts and then halving. Cover with some cling film and pound out with a rolling pin or meat hammer. Next we place a piece of Parma Ham on each chicken half and then place three Sage Leaves on top and secure with cocktail sticks. Coat in seasoned flour and fry in Garlic infused olive oil. Add in your white wine, Chicken Stock and butter, cook down and serve. We served with Parmesan potatoes however this recipe goes great with rice, polenta, pasta, vegetables and so much more, just don’t forget the bread to mop up that delicious sauce!
Ingredients:
3 Chicken Breasts – Butterflied, halved and pounded
6 Slices Parma Ham or Prosciutto
18 Sage Leaves
3 Cloves Garlic – Halved
Seasoned Plain Flour
3-4TBSP – White Wine – Adjust for more sauce
3-4TBSP – Chicken Stock – Adjust for more sauce
6 Cubes Butter
