🍅INGREDIENTS: 🍅
🔹 1/2 pound short pasta (like shells, rigatoni or bowtie)
🔹 Kosher salt
🔹 1 zucchini, thinly sliced
🔹 1 cup fresh corn kernels (from 1 large ear of corn)
🔹 1/2 to 1 teaspoon chili flakes (I used Urfa Biber)
🔹 1 cup cherry tomatoes, halved
🔹 1/2 cup shaved parmesan, plus more to your liking
For the Basil Vinaigrette
🔹 2 cups packed fresh basil leaves
🔹 1 medium shallot, roughly chopped
🔹 1 large garlic clove
🔹 1 lime, juiced
🔹 2 tablespoons white wine vinegar
🔹 Extra-virgin olive oil (about 1/2 cup)
🔹 1/2 teaspoon red pepper flakes

  3. I'm making this today. I cooked pasta yesterday because I wanted a salad, but didn't get it together. I spritzed with olive oil and sprinkled with garlic powder and sealed in the fridge.
    I'll be putting this together for lunch today. I'll have to make some substitutions, but looking forward to having this handy for the next few days! Having a side salad handy keeps me from craving a bag of chips with my sandwich! Jan

  7. 5:40 We call it "isot". Pronounced as "eeh-sawt". Sun fried cayenne pepper or paprika. The color should be somewhere around purple to black because it's basically burnt under sun.
