There's a recipe I learn a long while back. It was a stewed tomato recipe. Olive oil, two whole onions sweated in the pot, and then diced plum tomatoes. Cook it for a couple hours, then finish it in a pan with al dente pasta. Top with fresh parsley.
Throw the rind in your sauce while it is cooking!
This is it. I eat this all day long and folks think I’m nuts. Real rustic Italian cuisine is simple and to the point. No fluff, no guff. Just simple ingredients to end. Perfection.

To take this sauce up a level, oven roast the tomato first, ghis will give you a real intense sweet flavour. When using tomato paste needs to ve cooked out for a good 5 mins, or untill you see oil seeping out, this needs to vs done before addng any other ingredients, you also need to valance that tartnesswith some sugar or some sherry vinegar or balsamic and pinch sugar
With the rinds you add that to the sauce to help thicken it up and add flavor.. then you take it out and discard it!! Just an fyi.. love your videos!!
