Orzo salad is a quick and easy solution for a tasty, satisfying, and healthy meal. You can make it with fresh vegetables, chickpeas, and a zesty mustard dressing.

It’s an excellent recipe for meal prep, picnics, and summer cookouts, perfect as a main meal or side dish.

⭐️ Ingredients
FOR THE SALAD
1½ cups (225 grams) orzo pasta or ½ pound
1 can (15 oz) (230 grams) chickpeas or 1½ cups cooked chickpeas
1½ cups (240 grams) cherry tomatoes quartered
1½ cups (210 grams) cucumber diced
½ cup (60 grams) olives sliced
⅓ cup (30 grams) red onion chopped
⅓ cup (10 grams) parsley chopped
2 ounces (60 grams) feta

FOR THE DRESSING
4 tablespoons (55 grams) extra virgin olive oil
2 tablespoons (30 grams) fresh lemon juice + the zest of ½ lemon
1 tablespoon (15 grams) mustard
1 tablespoon (15 grams) maple syrup or honey
¾ teaspoon salt
¼ teaspoon black pepper

this is my Oro salad wow to a bowl add extra virgin olive oil fresh lemon juice mustard maple syrup or Honey Salt black pepper and a tiny bit of lemon zest whisk until the ingredients are well combined then add in the cheekpiece stir them in the dressing and set them aside for 10 minutes in the meantime boil the pasta in a pot with salted boiling water now rinse the pasta on there cold water for 15 seconds then let it drain well transfer it onto a large mixing bowl all right now we’re going to add in our cheekpiece and the dressing then add quarter cherry tomatoes diced cucumber black olives chopped Red Onion crumble feta or nerey cheese and a handful of chopped parsley easy right

  2. My family and I dont like chick peas. Can we add something else for protein ? We are greeks and follow the Mediterranean diet. Salads are in our daily diet.

  3. Looks amazing!! My husband doesn’t like olives 🫒 and cucumbers 🥒…. I know I know 😅 will replace them with peppers
