the author Cantina podcast I’m your host JP with your other host Anthony that’s me and we have a guest today Christian returning guest Christian galani the second the second returning guest him and Jim already [ __ ] up a Somalia and a uh not a Somalia let’s let’s just call Jim that not I’ve been called worse JP I don’t take offense um yeah great to be here boys it’s a beautiful Sunday morning in the Bronx yeah I mean I don’t know if you can see behind me it’s kind of oh he’s right outside he’s right outside you’re GNA be on the podcast it’s 1111 we ordered Fried Chicken because we’re going to be pairing fried chicken with champan want to grab that chicken one of my favorite pairings of all time that’s like a top five he’s Island Parry love you buddy thank you every Exchange in the Bronx looks sketchy hey buddy come here have a good night it’s 1111 uh Joe you want to drop the gate a little bit how do I do this you uh right behind you there’s a little control panel right below below below below who left that [ __ ] pizza box here who literally right Luke and the two PS didn’t pick it up son of is there pizza in that pizza box absolutely there’s absolutely Pizza eat sh why you know why there slice of pizza in there cuz if there was a slice of pizza there that box would be on the floor somewhere behind the counter or in the garbage outside you should be good right there Jo stop hit the red button Buton red Buton take that pizza box for me please nothing okay it’s empty it’s luk was back there I [ __ ] guess wrong son of a [ __ ] Luke I’m GNA [ __ ] you up you Pro wrong me L you little all right let’s get uh let’s get the talking let’s get the chicken open the champagne why exactly why exactly are we having Pope ice chicken at 11:00 in the morning with champagne well this is one of the best pairings of all time speaking professionally and personally this is one of my top five desert island like possibilities for a last meal just from A Fine Dining standpoint and from just a general standpoint this is one of the best balances of flavors on the palette you could ever have Fried Chicken Chine I feel like the French being I I think I’m getting too much heat for always [ __ ] on the French and the Canadians but the French being wahwah we wee we’re you know we’re so cool we’re so fresh eating fried chicken fried chicken typically not uh associated with fine dining but I would rinse a little bit with Christian with some champagne y just cuz I put Rocky in there to clean it got it oh jeez we always Prime the glasses Prime them with the rocki see that’s a great segue Christian why do we Prime well since you asked Anthony we in the business call it priming because you’re getting it ready for the taste experience and all you’re doing is washing out the glass and making sure even if you have really good um glass uh polishers in restaurants when you’re serving wine you want to make sure that there’s nothing in the glass that’s going to affect the taste so you know you could have residue of let’s say dishwashing liquid or in this case rocki or anything you use to wash it with so you want to make sure that you’re cleaning it out with something that’s going to taste just like what you’re drinking so we did a whiskey event down the street at a unnamed restaurant while back and to add to your point we had poured a flight of whiskey and I’m looking at the color of the whiskey cuz there’s five different kinds so each one looks a little different each one has like a different you know shine to it obviously different smell different taste but I’m looking at one of the glasses and it looks kind of like like milky I what the [ __ ] is wrong with this thing so I’m looking at I’m swirling it around like I see these like milky swirls in it I go what the [ __ ] so as I grab the glass and hold it up to the light I can see where the whiskey is sitting it took away the soap that was on the glass oh that’s terrible and the the scum was still above on the part of the glass where there was no whiskey and I’m looking at the people tasting and look at them sipping and I’m thinking how many of these [ __ ] people have soap t glasses right now and how many people just wasted their [ __ ] time coming here I was so pissed when I saw that yeah that’s that’s a big no but add your point to Prime glasses to rinse things oh my gosh you guys chill the champagne huh well Christian P Diddy’s locked up man what Fez where is it we need F to clean this up I’ll take care don’t worry don’t you worry it adds to the store it’s good luck in Fr so why did that happen Christian too cold too hot too hoto hot okay see and somebody might have shaken it before not me that was might have fallen and this is how we Prime glasses you make sure you coat as much of it as possible you make sure you coat as much of it as possible and just spin it around a little bit well we Prime the glass and we Prime the store floor there you go adds to my credibility adds to my credibility as a sound clean opening like that you know tomorrow F like why is the floor stick iure you I used to do this for Jo who did this I’m sorry if I went to a fancy restaurant and they go here’s our in-house somaler and you come out with a Run DMC hat or a shirt or whatever that is I’m like where you get this guy well I didn’t know I was working today JP I would have worn my shoe say if I was this guy before this guy SM the champagne all over the damn floor I thought you said you were going to The Dispensary after we did the after we did the podcast not before I’m like first of all I just want I didn’t get the [ __ ] memo about the dress code dude I mean listen I’m wear a Weird Al I’m just saying if you showed up spilling champagne all over the floor I’m like that’s [ __ ] how much is this bottle champagne man he just [ __ ] 5% you get a waste 5% watch glass anyway if somebody would have shaken it up beforehand you know which I don’t know how cuz that was definitely there from last night that was there yeah was in there for a minute was it not cold enough is there like a that’s that’s probably what it was what should what should the temp be cuz the fridge is set to 44 ideally you want it it’s set to 44 and you might have like the thermometer might be in the top or it might be in the bottom right so it’ll only pick up that one area and especially if you open it a lot so key is if you’re going to have and champagne has to be at a different temperature obviously it’s served colder than let’s say a Pino or like a crisp white wine or like even a delicate white wine you want that a little warmer so that you can pick up on the fruit so I would say that it was probably warmer you want it around 38 de you want it under 40 but you don’t want it too close to freezing is the answer all right so we got to drop the temp in that fridge see we learned something new that’s having Chris on the show I mean I hope to learn stuff when he’s on the show cuz I mean I don’t know a damn thing about champagne quite honestly champagne is one of my favorite subjects boys I’m I’m more in it for the Fried Chicken you know it’s nice about a bottle of champag like the Fried Chicken more I think when you uh when you do have the champagne you bring a bottle of champagne to any Gathering once people figure out the price value all of a sudden Everyone likes to drink it yeah yeah yeah that’s true if it’s like a $30 champagne no one really is in in thred but if you bring a $200 bottle all of a sudden everyone that’s drinking red moscato and [ __ ] sweet bubbly [ __ ] all of a sudden wants a glass all of a sudden like oh yeah yeah me oh Bueno yeah yeah yeah you pull up with the CW they’re like well how much yeah yeah drink yeah drink the you know chrisan is that like a thank you so much is that like a uh a perception of price means a perception of quality or is it because that $300 bot of champagne tastes like gold in a glass uh it all depends and I’ll get into that as soon as I pour but yeah um the reason why it costs more generally is it’s more labor intensive to make champagne and let’s talk about the distinction pardon my backend sir thank you thank you so we’re talking about the distinction between sparkling wine and champagne so champagne is an Appalachian right it’s a name of a place it’s named after the place like wine can be named after the place the grape the fantasy name in this case it’s named after the place there’s a town called champagne and the Champagne region is in is north of burgundy in France and it’s cold and it’s rainy and chardonay which is a high acid grape is the base grape that they use so there was a treaty of champagne and this was during prohibition here so the world basically agreed that the only place they could call sparkling wine champagne was France because it comes from the town of champagne or from the region of champagne and what makes it different is that secondary like the bubbles get formed in the bottle they don’t add CO2 like they do with um prco or Crema sometimes so it’s got to do with a method so literally you have to stop fermentation then add uh an expedition liquor which is just sugar and and like Bas Spirit like brandy and that then restarts the fermentation process in the bottle and what’s the product of fermentation is alcohol and CO2 oh you Chas that so Joe done for you no thank you whenever you guys Place anything on the table put them on a I know cuz it goes you know how [ __ ] I feel I just want to smell the M cuz they getting the away [ __ ] all right Joey all right maybe we get like a like a mat or something very gently I mean we just continuously break the don’t eat on a podcast Nick shout out Nick um Nick’s done a lot of podcast he knows yeah he knows but he does say you guys always smacking your lips when you’re eating stuff he has some kind of um medical condition where he can’t stand the sound of uh the gutal sounds of eating and smacking I don’t think anyone can so hold on so before I just start eating the Fried Chicken witch what is the difference like is there like do I drink eat it eat it drink or just enjoy both just enjoy both and see how you like the two and when you first of all what is this champagne it’s fantastic Nicholas fuak so this is a old producer very venerated solid they make good champag they don’t produce a ton of it even though they’re a pretty mediumsized producer and solid you know it’s a great value because this taste expensive mhm but it’s not so the blend is Chardon ponir and P and the acidity is what complement that sort of greasy sort of umami just real hearty Taste of the Fried Chicken it’s that real satisfying you know sensation and you balance that with the acidity and the brightness of the champagne it’s perfect for the novices at home the three names that you just mentioned ponir mhm P Bianco p m p what was the other one chard and charday those are the three grapes that they use three different grapes to make this particular champagne okay see I was about to ask what it does it doesn’t have to be a certain Gra for to be a champagne it does you can have any of those three grapes mhm so the standard blend is those three but if you use just Chardonnay it’s called Blan to Blanc or white from White in other words a white wine from white grapes and if you uh just have p m or Pino Noir Blended together then it’s blond Noir or white wine from black grapes okay so they take off the Skins obviously and they don’t let the the wine the juice sit with the skins and that’s why it’s white it’s not uh it’s not Rosé see just sort it was now you saying second fermentation happens in bottle so traditionally how does a regular wine go through fermentation how do you get the alcohol in a regular wine so you let it sit right so naturally fermentation happens in all things in nature that have sugar in them eventually the sugar breaks down in the life cycle of the plant or the the berry or whatever it is or the fruit and as it breaks down chemically speaking the reaction is it’ll produce alcohol as it ferments and it’ll produce CO2 so with regular wine or let’s say still wine in this case they’ll collect the grapes right they’ll Harvest and they’ll sort it and they put it uh to merate right they’ll squeeze it they’ll press it um and there’s a big machine that looks like a toothpaste tube like a metal toothpaste tube and it’ll squeeze literally squeeze the grapes and for red wine they let it sit with the skin so that it pulls the color and the tannin from the grape skins and in white wines typically they don’t although I brought us this a wine that’s an orange wine which is a white wine that does sit on the Skins we’re you get [ __ ] up today I think so in theory I think so something different honestly I’m really enjoying the shampoo you’re normally not a fan I was going to say I don’t know if the chicken is [ __ ] came from a better location the chicken tastes great well that’s the beauty of pairing boys well yeah I know cuz I had the chicken before the champagne I was like eh it’s just shitty papey or you know I don’t know if we should drop popey’s name scroll but then I had the champagne that’s a little bit better now but I think I think it’s the champagne I think the champagne is really good cuz like I said normally I don’t like champagne so this is what what being a somier is is making the food and the wine taste better together so really all you do is pair stuff I’m in the wrong line of work see but I I was never a fan of like when I have a dinner I don’t really drink what I’m eating I like my water I feel like I aunti I know Auntie yelled at me about like steak or whatever what you talk about trying to open their mind Christian none of these guys wanted to drink a bottle of wine with their steak don’t they work don’t you work in the I’ll drink a bottle of wine I’ll drink whiskey I just don’t like I like to enjoy my food and then I like to okay so it to JP’s point if if you’re only if you’re beginning frame of reference it’s like in America we have a different Paradigm you know we have a different Paradigm around that especially having grown up when we did I’m not going to just discuss what happened here in the background the pantomim was just Sublime it’s real early in the morning for that guys by the way just it’s like 11 it’s not even 11 on Fried Chicken already so you can’t you can’t do that in front of front of somebody with a sarcastic sense of humor but um at the end of the day it’s like in America we were raised to like have like soda at the table right we weren’t really looking for a for pairing experience so in Europe especially Italy and France you know the wine is just another side dish on the table and you know the kids are you know at at like a young age at like you know you have like a little bit of wine with the meal and it’s just another side dish on the table that’s meant to elevate the food so you get used to that in America we’re not used to that go I just I mean grow like to this day my parents will have wine you know they’ll always drink wine with the I was just never into it even like when we have like um like holidays you know everyone comes over the everyone drink I’m like I’ll have my water when I’m done eating then I’ll get tuned up I want you to try so you see how this pairing works right so what’s your favorite food I want try to answer that for him his favorite food um got to be candy mayonnaise candy I don’t [ __ ] with candy I’m trying to insult them but yeah mayonnaise kid is a big mayonnaise he’s a big [ __ ] for mayonnaise he’s got a a Costco siiz tub of mayonnaise in the fridge our fridge can only fit like five things she half of it mayonnaise now always bugging out because I’m making too much noise on the table hey man the chain uh sh [ __ ] love mayonnaise they’re like oh put May on everything and [ __ ] about me uh my favorite food I don’t know I have a lot I mean look at me I’m a big boy so the next time you have like let’s say a steak you in the steaks yeah of course all right so the next time you have a steak open up a bottle of either Alano and leave it open for about a half an hour beforehand and let it breathe a little bit and then have a bite of the steak with a little sip of wine before you have anything else M and tell me what you think tell me if you have a new opinion of that wine and that steak I had um I want to say it was the primitivos and it was I had it with like spicy souad I was like this is fantastic oh it works well together and then I was like I kind of understand spice yeah fruit balance is spice I try to bring them out to events just because wanted something fun to do outside of work it’s just always working but two usually is a pairing there it’s a wine pair with some kind of food now if you go to the big wine events that don’t really have as much food as they used to back in the day yeah so more of like the wine dinners like when um they have some event going on and there’s like a three course meal paired with four different wines they get a real sense and perception of what it is to pair something and then it’s ingrained in their head so next time someone comes in and says hey I’m having whatever spicy ravioli even though it doesn’t really exist but just to throw it out there um he knows already cuz he had that wine at that event and it clicks in his head he goes oh you the wine you want is this one get it so if any other liquor stores are listening take care fles out to events don’t just go you and your [ __ ] accountant take the guys who work in your store bring them with you let them learn they’ll sell more stuff for you they’ll be a happier worker that you actually you know want to spend time with them outside of work speaking of which they might not like you they might not want to go with you so you might have to pay them to go with you but otherwise uh I think it’s worth taking there speaking of which we just went to one when was it uh Tuesday Tuesday we went went to a chinola what was it a not a tasting event but mango launch party they called it yeah and normally something I would never drink Chola Fruity Fruity you know whatever mush I don’t even know what you call that a laor street ter is garbage we like those people as janola Christian we like we like relax Christian they’re nice people cast the hell a out of dispersions around I’m sorry no but like you know it’s for like mixed drinks and crap something I would never drink and you there’s a market for everything seriously speaking I think it to their defense it fits a hole mhm right you have like this cross in between where it’s not a spirit where it’s 100% concentrate and it’s not a fruit juice where there’s no alcohol it’s kind of in between well the point I was making is I would never have drank that I would have never been like oh you can mix this with this that and the other thing we had all those drinks you know they were fantastic so oh you want to make a pineapple whatever the hell that sh was that was the best one yeah that was the best one normally people oh how’s this taste what do you do with it I’m like I don’t know dump it in the garbage but no this is actually good like I could be like oh yeah now you have a real life perception of how to enjoy this cocktail how to drink this thing so someone comes to you like you said you know what to do because drinking it straight especially the mango one yeah yeah yeah not a cocktail not a spirit to drink straight it’s like when people come in and ask me about a Mars and they they go oh you know what do you do with it what do you what drinks you make I just drink it straight the chinola mango actually reminds me of like the the goo they were feeding RoboCop like the food like that paste that’s kind of like what it looks like yeah yeah I mean I’m going to pour myself some yeah pour me some too please uh the Apple really pops out with that chicken I guess the grease the meat just the Apple really shines I’m very greased up that’s what she said but yeah no it’s it’s the it’s the balance of the acidity that brings out the flavors in the chicken and vice versa you have that Umami and you have that um the breading the pops is it because the the fat or is it the Protein that’s washing your tongue both both both absolutely they bring out I don’t know exactly what the um receptors on the tongue are that pick up on each but I can tell you that like we talked about opposites being good pairings like spice JP brings up balancing fruit like in the Primitivo the acidity uh in the champagne brings out the Umami and the chicken and vice versa the Umami brings out the fruit and the acidity and that brightness in the champagne it tastes more refreshing so I think that brings it out a lot and this is another thing to your point Anthony having the champagne not quite super cold is nice cuz the fruit will come out more so white wines typically the more you chill them the less fruit you detect right because those enzymes get slowed down so I’m definely going to take your advice so I’m going to dial down that fridge a little bit more just a little bit I think we’ll we’ll start you should put the champag at the top or at the bottom uh it depends on where the where the cooling element is I would say cold air sinks so I would put it in the bottom keep it at the bottom that’s probably might be why we are an educational show when Christian’s on I going to change it’s me you and Jim talking about hookers and free bracing crackle game but that’s very educational that is I mean Jim is uh Jim Deo is very educational but well it’s funny because um he’s Street Smart Jim was our our first guest and then Christian was our second guest yeah yeah right Jim was on he was our last guest was Jim then it’s just been me and you and now it’s Christian on again so it’s like almost a repeat of season one well yeah we had Greg dag but we never aired his episode we got just read he was after Jim chistian and Greg dag correct but Greg de never no no it was Jim Christian again to Good Old Country whiskey you drink Wyoming the fio Italian name not that Italian though drink that whiskey and go fight some Wildlife don’t even shoot it just try to fight fight it like a rainow knife and just stick your hand in the river and try to grab the fish bites GS nice [ __ ] man I think you got me hooked on champagne I mean fried chicken I was already hooked but the champagne well it’s funny Christian I took your advice carrying this uh champagne and I had it not too long ago maybe like 2 weeks ago yeah and it didn’t taste anywhere near it is good and now the right pairing is going on it’s tasting fantastic so I think that’s also a great lesson for our customers too sure like yeah we give you the recommendation what’s good but if you go home and you you know you’re smoking cigarettes and you’re drinking champagne it ain’t going to come off as good sure what’s a good cigarette champagne um I mean that’s a that’s a very French question I go back I go back to my old days as a smoker and I would say uh if you’re going to stay in France I say Gua you know you you have a g and and a glass of champagne that’s about as French as it gets to JP’s point but I don’t know I’m the Ugly American so I say is that like am is that English for v no Gua is uh is a brand of cigarettes in France oh no I’m so with the okay the champagne to pair with that the champagne to pair with the cigarettes would you put like a like how you would say a cigar with you know or whatever yeah that’s a good question I would say cigarettes are more of a chemical taste so you know really anything you’re drinking it’s going to deaden your pallet to so I would say a strong tasting champagne so you want strong acidity I would go with Krug or any Blan to Blan I mean my my drink of choice when I smoked that would be M Reds and like Makers Mark or something like that Yeehaw really kill your give yourself throw cancer as fast as possible well man the the the table gets answer at that point wow well Brading maker Mark obviously they big conglomerate what the hell do I know but I can never really drink it on its own I always have to have it mixed up with something I actually like makers with ginger a little bit that’s that’s one of my favorite makers combinations the golf event we went to I had a smokey Sherry Cask Scotch M went fantastic with ginger ale sounds good it was delicious I was really impressed by it was probably like a $100 Scotch but right whatever what are you going to do but it was fantastic on the golf course it was great I was crushing themer uh ginger ale gin and ginger ale I think is really good too never had that it’s very good have to try Ginger Rail and uh Steve the Cosmo’s favorite shout out Steve the cosmo uh he doesn’t listen he I know I’m going to tell him who shout it he didn’t give a [ __ ] he’s be printing 3D toys uh captain in ginger he likes and it it just tastes like a cream soda captain and Ginger is is one of the all time and ginger beer is really we actually have a delicious Ginger uh digestivo oh yeah some [ __ ] he sampled I was brought in I love it if you like that Ginger and it let me tell you settles your stomach and the flavor of the ginger is fantastic on it CH you’re gentlemen thank you ah sure [ __ ] thank you appreciate it there we go and I to your point what you made earlier uh a lot of Apple coming through a ton of apple man like I’ve tasted it before on the nose like a little bit but after you have that chicken man that Apple just [ __ ] a little more to Fried Chicken chrisan we got to go out to eat one night where should we go absolutely uh let’s go to the Boo by me let’s go to the steakhouse in Fort Lee and I’ll crack open a bunch of uh sort of degenerate wines that I had in the in the wine Celler that I was sort of saving for a special occasion what um what’s the name of the place it’s called Uh Prime um so it’s it’s in Fort Lee and um I go there for my birthday or I’ll go there for like occasions cuz it’s Boo and um fantastic meat fantastic service small like it’s churn and burn right they get you out of there in like two hours cuz they have so much business but um fantastic and you can Crush whatever bottles you want that’s to me having a a boo Steakhouse is just fantastic is like right next door we really don’t have those in New York yeah no it’s it’s operating costs are what they are right so I guess they have to make more money off the booze booze is what keeps keeps the lights on so in Jersey it’s easier because the rents are lower I guess yeah makes total sense pass me piece of chicken what do you need chicken Chen so this is a great pairing and I think uh another weird pairing that people don’t really think about um but it does very well is like similar to this like when you’re talking about acidity and uh when you talk about acidity and and uh just sort of that Umami that um the fat great combination when we were kids tomato soup and grilled cheese same idea yeah that’s a great Point even though I don’t think I ever had tomato soup as a kid or grilled cheese you haded cheese no my mom was not uh she wasn’t making this American stuff but like in life there’s never like you never went to din had it as a kid I could imagine it would be a great tomato soup home feely that was the only thing I could cook for myself that’s what it was like if Mom wasn’t around to cook [ __ ] throw grilled cheese on there try to do it my best got to love it for Gen X man we were the we were the K do generation man I know I think we’re the biggest group of complainers no no no that would be that would be Millennials J the newer the two Goofs that we got going on they’re both what 21 if that and uh F about this week’s dilemma so they both wanted the weekend off which we hide these idiots because weekend’s the busiest time you know we’re very flexible we’re very understand these kids want every weekend off never in my life have I seen anything like this anyway kids today bro it’s they they work they work like three days a week and then they want more hours and then they take hour anyway they both wanted the same weekend off and we said Auntie said this ain’t going to happen one of you has to work you know figure it out between the two of you you guys talk to each other figure it out and they would did the two you figure it out or well they were scared they didn’t know what to do they didn’t know there wasn’t an app to talk to each other there wasn’t a students to [ __ ] figure it out and they’re asking atie oh can you can you do this can can you ask him and he said you two figure out amongst yourselves and like their brains exploded it was like they just stood there like huh how do I converse with another human being maybe it’s too much like video games like too many multiple choice Quest things they could uh choose from and they didn’t know what to do when something went wrong well it’s I I think they don’t like the conflict I think that’s what it is it is they don’t want any this is like this is how I’m going to go on one of my conspiracy rants but like with theck downs and all that they want these people to be not face to face they don’t want to work things out as humans order your food on a Seamless app like Anthony did he didn’t have to talk to anybody except for the migrant that dropped it off and I had to go handle it for him but like have a good evening yeah I had I don’t want to tell who who the person is but they they ordered something from you know seamless or whatever and the restaurant calls them back and goes hey you know we don’t have this or blah blah blah and they got so upset they were like you know why are they calling me I the whole reason for the app is so I don’t have to talk to anybody I’m like this is this is life you have to talk to people yeah I think I think this generation when I say this generation like genzies especially the kids that have been affected by the lockdowns and all that stuff they were really um insulated you know against they were taught and brought up to think that any sort of human interactions and anything that’s conflict or anything that they experience as stress is bad yeah yeah yeah but that’s the same mentality that they use to sell opiates it’s the same thing pain is bad pain is bad [ __ ] it’s necessary it tells you something to your point you may not like the message it’s through the [ __ ] roof exactly it’s the same mentality it’s this drug addicts mentality it’s this sort of mentality that you can’t have any pain and you then line up everything in your mind subconsciously to then avoid pain yeah and that’s what this generation has been taught to do and they’ve been taught that anything controversial anything that doesn’t skew with their politics or with and I’m firmly left wine here I want to be very clear about that but I I think you’re right about that 100% um to to totally against you guys point I kind of love the lockdowns I was doing 80 mph on P Parkway yes the road completely clear do agree with that I got to be home before the sunset I got to spend a lot of time with my boy he was you know just a year old uh actually he was born during the pandemic so he was you know infancy he stayed home with his mom the whole time so for me lockdown was uh was fantastic I love it but but I was an essential worker you were a developed human like for lock down for me when I I was working my old job the the um you know maybe a kid needs that too who but imagine if you were a kid and you never got to have your graduation you never got to play with your friends in the park you never got to do you never got to go to school and have the experience K took advantage of that and never want to go play in Parks anyway and stayed home and played on their [ __ ] phone we look we the street we grew up playing the Street in high school that’s when we came along like oh we could play video games online with each other so like but we would still we still go out play SOC like crazy but but we would still go out day TR whatever these kids don’t do that they’re all let me send you a Snapchat or something you know it’s like but everything they’re like you said they’re afraid of Confrontation they’re afraid of being uncomfortable they don’t know what to do they they’re never taught like also true you know oh [ __ ] doesn’t go your way they just go I need an adult I need an adult they can’t [ __ ] figure it out themselves and instead of just going you know and having a conversation with somebody that pisses you off and maybe getting into a fight they organize an online program against somebody and they want to cancel somebody so and that’s pervasive that’s on both sides that’s on both sides of the aisle now that’s on the right [ __ ] of course cuz they go oh yeah I could do it to you too I was on the bus last night I was going to uh a party in Midtown I and I was on the I was on the cross town bus and I saw a group of kids screaming and filming a circle of cops that were trying to detain somebody and literally it looked like they were like like a wave of people about to eat the cops so that’s the same mentality these days where it’s like everything is online Shame Shame Shame and that’s part of I think that’s part of it is just this idea that you know if you don’t like something then it’s automatically evil yeah yeah they yeah there’s no there’s no uh you know there’s no two-way discussion it’s like it’s my way and if I don’t I’m going to freak out about it that’s right there’s no Common Grounds we usually do goofy of the week I guess those two are the goofies of the week those two are goofies you both are goofies they didn’t know what to do Andy said figure it out among yourself they huh huh and I don’t even think they did eventually one of the kid was were just like fine I’ll work like good done builds character yeah and a paycheck by the way it’s nice having the money that’s why they come in the first place right well it’s funny because they go oh you know I need I need to make money I need more hours I need you know and then I go okay you give more hours and oh can I have this day it’s like you just ask someone and I’m I’m someone who I work to a fault where I’ll be half dead I’ll still come to work I can’t take a day off these kids are like oh my cat has videos and memes on online that you know talks about I got to take off I go okay man everything’s okay he’s like yeah yeah you know well yeah cuz my cat has k hisle teeth cleaned and what now I had to bite my lip I go okay all right yeah okay you do what you got to do no problem it’s funny cuz even Fez because Fez is like CH I got one I had two days I got to figure the only day I have off is Monday I have doctor’s appointments I schedule them on Mondays like because that’s my day to do [ __ ] right I had to miss an appointment last week for a golf I had to reschedule it’s now it’s two weeks out but I’m not like cuz they like you can come Thursday or Wednesday I’m like no I have to work speaking of golf good time we had a golf outing last week and uh Joey couldn’t come unfortunately so we missed him dearly yeah we missed Joey we were we were terrible we suck um but we had a good time your filling wasn’t as good Joey just you know the guy who filled in for you still a good guy John Eric he was the man the night before was fun but he golfed two holes and left I thought we were we were so loud cuz we got up there the night before and we were just yelling and screaming until like 4 morning and I thought for sure one of the people hosting the event was in the room next door I’m like we’re going to get so many dirty looks the next day I’m like [ __ ] we’re going to be like we’re not going to get invited again but it turns out I was just uh worrying for no reason there was no one else there it was just us yeah I don’t know why you were she wasn’t there at all that lady she wasn’t there no she wasn’t there so that car was just there for that car was just a ghost car I don’t know who the hell’s car that was wow that’s crazy cuz yeah we got yeah we got a little too crazy I got so I didn’t expect to get that drunk the night before I laid down in bed and I oh [ __ ] everything’s spinning some imp PUK which was fantastic but I didn’t get that tuned up I had I think three shots we had three shots I had like five six beers I had a little [ __ ] puff of the devil’s lettuce that was it Devil’s lettuce I like that one it’s the best kind of lettuce man the next great thank absolutely fantastic cool so this is another pairing that I like which is similar and uh we’re going to try an orange wine from Umbria Umbria nice where’s Umbria for the folks that don’t know JP a [ __ ] find that’s right next to Tuscany for those of us that flun geography I mean they didn’t teach just Italian geography yeah we didn’t learn nothing about the Italian Revolution the Italian uh yeah because I got 20 years of working at this [ __ ] store so I can do that love that uh and I know a lot of the employees and the the guys from the other industry coming in looking for me they’re uh they the house I just got to take care of the house house has a lot of work needs to get done I’m in the middle of uh retrofitting my whole HVAC system oh wow so getting rid of the old oil boiler and getting some new uh mini split units kind of like what we have in the store wow uh yeah big big thing um you know I recommend anyone going through it definitely do your homework be willing to say no more than you say yes because once you say yes you are now indebted for the next 30 years of your life so you know say no whatever person that comes to your house say no nothing to do with Wine Liquor right now just trying to hold my own while everyone else is getting their uh so boys this is the biano fongoli it’s a tabano it’s organic and tabano is the sort of cash all ubiquitous white grape of Italy it’s all over the place Italy’s lousy with tabano so it appears everywhere from Sicily all the way up uh through the dolomites well traban is normally a Bruto right well tabana no comes from it’s all over it’s all over so you have it in Amelia you have it in Tuscany you have it in um Veno you’ve got it everywhere really but if someone goes into like any regular liquor store they’re going to see tabano it’s toave Suave well no Suave is ganaga um tabano is going to be something lugana lugana yeah Pon right so Pon and lumber get get lot of uh tabano and lugana is one of my favorite iterations of it but you can get it in um you can get it in uh Amelia for example and my uh grandparents wedding wine was a tabano from this little Vineyard that they just reopened these hipster kids reopened I think 10 years ago it’s called Lupa in Rivero Rivero is roughly I would think an hour outside Milan and uh this was their wedding wine was in Orange wine that you can find again called the jeno do you guys carry that lopa nope uh but that’s it’s fantastic um and that’s a tabano that’s that’s an orange wine and it’s also um really good with what we’re pairing it so I’ll let you guys taste it and you tell me sounds like you know a lot about Italy Christian that’s my H specialty in the wine world was Italy for years cuz I worked uh for BNB for years which is Balan banish Hospitality Group so my uh background my family background and my uh professional background just led me to to the Italian wine world and I steep myself in it just for business reasons really it’s almost like you could do some kind of like tour over there yeah as it happens we’ve been running tours uh and my wife now runs them for 10 years in Italy we have just like we have our the revenue Food Tours here because uh that’s how you know we know each other going back I think even before then when I was selling you wine for petito y um so just like we have the food tour business here we now think yeah when they come to New York they all come to Time Square because they think that that’s what New York is when really it couldn’t be any further from your t-shirts are 71 I don’t know what just happened but it stopped recording what do you mean just now yeah so the computer stopped recording we got take a second wine we still got the cameras anyway and the cameras are on that’s the clip right there boom now we can start recording man dig now I can ask the questions I want to ask about so guys we’re drinking this Bianco fi biano fongoli it’s a orange wine correct that’s correct now a like like I told you before people come in and they ask for orange wine and they ask if it tastes tastes like oranges hardly no doesn’t tast orang it’s not made of oranges no orange refers to the color as you’ll notice so it sits it’s white wine that sits on the Skins the way red wine does and this is the way they used to make wine going back to the Phoenicians right they didn’t have this very clean very filtered process we have now obviously so they just throw a bunch of stuff you know into the press and they would let it sit on the skins or whatever and then they would put it in an aerm and that was it and it’s ironically very similar to the process that they use these days except it’s more sanitized these days but yeah you get so when we talk about uh The Taste and the profile and the aromatics and all that stuff because the Skins obviously you know are in contact with all the stuff that’s out in the air you know in in the environment right like the flowers the bees that pollinate everything also have contact with the grapes and all that stuff that’s why you get all those floral components to the wine so it’s almost like and you get the stem tannins you get those tannins cuz it sits usually they press it whole cluster so you’re going to get elements of um FL flowers you’re going to get some sort of faint tree fruit um anything that was around it right and it’s almost like they left they crossed a beer with a Savon Blanc yeah that’s what you said before and that’s exactly what it tastes like almost like an IPA with a Savon Blanc it has a very fruity uh floral notes right I mean I I on the nose yeah I always feel like I’m awful at giving taste and and not and all that [ __ ] but let’s so let’s let’s structure it so it’s easier so on the nose what do you got one fruit and one non-fruit descript there almost almost like a almost like a peach yes stone fruit absolutely see there you go I might be a [ __ ] secret Som here you’re better at this there’s no secret about it you’re in the wine business you you’re ate wine by defition yeah it’s just what what what it is is that there’s so much so much that goes into wine even though it’s not but it’s just it’s just a lot of different variants sure so it it becomes overwhelming for me but like you said I get like a Beery mhm beer not to as well yeah yeasty yeasty there you go yeah it smells almost like brw yeast mhm all right so and you get almost like that that forest floor like that smell of Twigs or something yeah and like you said it has like yeah like a beer mixed with a wine almost kind of looks like piss kind of looks like piss I mean piss looks like that I’d go to the doctor it smells like mahogany orang it smells like wood yeah it has that Woody like foresty smell orangey and color especially as you swirl it as I’m looking at when you swirl it it gets a little deeper orange now champagne you don’t swirl you can you can you can I mean people scoff at that people scoff at everything but you know they do it because they don’t want you to get rid of the bubbles but the fact is is I like the idea of tasting everything in the champagne so it’s not you know swirl it once yeah it’s but it’s moderation now this kind of tastes like um there like a Bolivian thing they would boil the pineapple skins yeah after peeling a pineapple and they would drink that water it’s like full of antioxidants makes it piss like crazy kind of has a similar taste taste good though yeah I get sour pineapple in there maybe some papaya something like green papaya it’s like when you have that memory and your brain gets triggered because it picks up all these senses and smells yes smell and taste really trigger that for sure PTSD it’s like you’re drinking a lot of Bolivian piss it sounds like but that’s another story for another podcast well they said it it makes it taste better right with pineapples that’s what they say that’s what they tell me I love a good pineapple natural wine yes orange wine yes same thing no natural wine refers to non-intervention so natural wine a lot of orange wines are natural in the way they’re made but that’s a choice like natural wine can be red natural wine can be white but not the same thing as organic I thought organic was you don’t touch nothing no organic means they don’t add anything to it while it’s being grown but they water it they don’t water it they they depends on where that’s another argument altogether that’s another rule right so in Italy deep we’re getting too deep for this so in Italy you’re not allowed to and in France you’re not allowed to irrigate right it’s whatever it’s like the Good Fellas [ __ ] you pay me rule right of poly doing business with poly to be organic to to no to just get docc to get AOC no irrigation Iration oh you had a fire [ __ ] you no irrigation oh you had a drought [ __ ] you no irrigation oh so how do they it just natural just by the rain or something just the rain just the rain how I grow my stuff now these days you have wine makers that are saying I can’t afford to lose a whole Harvest so I’m going to irrigate and you can take your nice little doc steel and you can crumple it up real tight and you know what you can do with that so they had to do that especially during covid when they had um when they had a hard or I guess it was 21 when they had just a really dry and hot growing season so the berries were coming out really small and it was the vines were getting scorched so they just ended up having to irrigate and they didn’t get doc they put I I forget what they put they put IGT or something on on a lot of the wine in Italy now I feel like that’s a way to really fluctuate the market the pricing like if like you said if it’s a drought if it’s a dry summer whatever the hell not much comes out they could be like oh well now this doc wine is three times the price it was last year cuz it was you know I think 80% of customers don’t even care doc on or not no nobody gives a [ __ ] depend some people do some people go oh this is Doc but I’m like 80% don’t they don’t even know what the hell they’re drinking they just want to be drinking something they think orange wine is made out of oranges well orange wine is is relatively new I mean to to the public I guess um they’ve been having a Resurgence I Georgia is is the capital of orange wine in Europe Georgia Czechoslovakia now just makes fantastic like Milan noar makes fantastic orange wine that’s super accessible um my favorite orange wine of all time is grer and Mia but graer you’re talking like $200 a bottle retail 250 radicon radicon is expensive as [ __ ] but you don’t have to go that route Mia for example from Slovenia is my very is that and grer are my two favorites just banging just fantastic shout out to the slovenians yeah they make the sick thck orange wine bro it’s great I would never think that it’s fantastic well they make a ton of Oak a lot of Barrel Oak yeah they make a ton for the wine production they do and it’s neutral Oak yeah it’s it’s just slightly less neutral than French Oak so it’s not quite like you don’t get as much vanilla out of the Slovenian Oak as you get like American Oak cuz the the the um the slits microscopically are less open than the American ones the American ones let a lot of vanilla in that’s why they do to bbid and stuff like that yes sir and this is um got like a canned meat nose in this canned meat spam something like uh like devil’s food they call it no idea devil ham no is it devil ham it’s like like a spread yeah like a little devil on the White Label yeah no idea that’s what that is yeah that’s some Bolivian stuff that’s [ __ ] H I’ve had that as a kid that’s like spam same thing yeah yeah so Umami is one of the characteristics of orange wine for sure what do you think of the bearing you think it makes the chicken taste better I just finished the chicken I mean chicken still tasted good so there one big old like I never learn this cuz the teacher goes you should have learned this in like 8th grade and I looked at one of the kids that I went to grammar school with he was like the valid dictorian I like did we learn this he was like no we didn’t you sh you never learned multiplication yeah yeah pretty much it was something like that simp who’s Victor I don’t want to say his name he well he shouldn’t have got it my boy shout out Jeff should have got it they didn’t give it to him because he’s Puerto Rican it was an all white school all right so you want to say his name or some kid you don’t like Tom shits yeah Tom sh were you kidding me no some other kid but point being was we didn’t learn it everyone else in the in the in the class was like oh yeah we learned this last year and I’m like a teach a [ __ ] so don’t don’t send your kids to Catholic School to the wise where to the where to the wise so getting back to the wine discussion does everybody does everybody like this wine this is actually very glass pretty good I’m on my second glass actually yeah so I like this cuz it’s also getting back to your question about natural wine natural wine means that it’s made without uh industrial yeast it’s not made with um excessive amounts of sulfites where they get the yeast from just naturally on the Le naturally occurring yeast yeah nice and they use or indigenous yeast like whatever is is around in the environment that they collect so natural wine basically means that it doesn’t have excessive amounts of sulfites it doesn’t have any chemical intervention it’s it’s as close to the Natural processes you can get without you know having it purify and you know get icky and uh orange wine often is made in the natural method but it doesn’t have to be and um organic literally means just that it’s made with organic grapes so that’s biodynamic means that it’s the highest n possible grade of organic and that’s what then paved the way for the natural wine movement now what classifies do you know what classifies as organic yeah like are they using pesticides on the grapes none of that right no they do not use pesticides they don’t use the distinction between organic and natural is the process is the rest of the process so natural wine is is a fantastic way to go for health reasons right but it also doesn’t give you the same benefits that conventional wine does like it’s a lot easier for that wine to spoil cuz it’s got less there’s less preservatives there’s less you know the whole point of the of the conventional wine process is to make sure that when you bring it home from the store it still tastes as close to the way it tasted when it left the vineyard that’s what that’s all about is to make it more shell stable so that’s that’s the risk that you’re taking is the idea that you know it might have spoiled somewhere along the way now this is not vegan is it uh I believe it is not vegan because they still might use traces of the fish protein okay cuz that’s something um you know not many people know right they don’t you don’t think oh this is wine it’s made from grapes grown out of the ground how’s it not vegan you know they running through fish guts they some other type they do goat something I don’t know but a lot of people don’t know think about cheese with the goat uh okay but fish guts is like a way they do it right yeah as a preservative yeah peoplee drink wine I’m vegan we have we do have vegan wines there are vegan wi we have a couple but a lot of people don’t know that cuz why the h i I never knew that until I started working here why the hell wouldn’t wine be vegan so why why do they do that do you know like why they run it through fish guts well to prevent it from putrifying sometimes they’ll add like um they’ll add traces of fish proteins and fish like cartilage um they’ll put it in contact with the juice so that it doesn’t spoil or purify um it’s czy it’s like a and it’s also done to give it consistency sometimes it depends on the wine maker and their intentions but bottom line is sulfites for example people think I’m going to steer it back there because it does the same thing in the wine they’ve been using sulfur since Roman times or even before then since Babylonian times because wine naturally is like grape juice if you let grape juice fresh grape juice sit out anywhere even not in the sun it’s going to purify it’s going to turn grantd so you need to stabilize it you need to have an antioxidant in it one in 250 million people is actually allergic like fully allergic to sulfur just to give you an example so when some customer comes in and says oh I’m allergic to the sulfit no you’re not you probably have hay fever and you’re probably drinking Oak wine that gives you a headache because it’s setting off your your allergies right because it’s sitting in Oak chips like you take a wine like a really oy like California Shard pick a name out of a hat cupcake whatever if you suffer from hay fever and yes [ __ ] cupcake but if you suffer from hay fever and you get headaches from wine you’re getting headaches from the oak MH you’re not getting headaches from The sulfur yeah a lot of people don’t understand that as well cuz we do we do explain that to some people and Fez always does that as well someone comes in oh [ __ ] sensor it’s it’s on the Buffalo someone on the Buffalo was he going to say we got the blackout going here fell I guess we could still use this audio so uh what Fez says he’ll always accept people go I can’t drink this one it gives me a headache and he and he’ll he’ll say something like Char it’s probably because this oak or the sulfates or something you probably have Aller you probably have you’re probably allergic to the Wy it’s probably the woods you have I told them how come how come you don’t have fish flavor in the wine if you’re running it to well you know if I put [ __ ] a little bit of salt on they don’t take a yeah but a fish that they just pulled out of the river and gut it and throw it in the v yeah but I feel like fish like fish guts or whatever the [ __ ] they use I feel like it would be such an overpowering thing I got to finish this boys I’m getting wrecked let me hold up for the camera when you I’m porn yeah I got a ton of [ __ ] mahogany is it chicken love I’m I’m getting wrecked boys this might be the drunk I might get us this is the drunkest episode we’ve had so far might the drunkest episode oh the first one I was on was bad too yeah we we had a couple bottles that was all longest episode too that was all longest episode well that’s this is what happens we try to go we’re going to go an hour but when we’re tasting everything no it’s tough well Christian there’s a lot of tell us all this info he’s giving us fantastic wines a lot of chicken a lot of chicken this will be the drunkest episode to we might love being a bad influence yeah yeah we’ll see what happens next week with the coming in the store after we fired him he came in yesterday cuz I think he knew he kind of [ __ ] up it was just this was coming and then he came in and we were trying to work something out and ended up screaming at him in front of all the customers for like about a good 10 minutes and then I wouldn’t talk to him after that he kind of stuck around he’s like come on come on I’m like this sounds like a breakup man this sounds like a romantic relation him in front of everyone and then he left and he was pissed for like I don’t know a good month maybe two months so then what I would do is I would I was like yo are you coming to my kids birthday party he’s like just bullly he goes uh he goes no I can’t make it I go I wanted to hire you as a clown so you want like 200 bucks I’m dress as a clown he’s like you [ __ ] he didn’t answer me after that so every couple of days I would send him like a video clip from The Sopranos like Tony Soprano talking down to somebody oh God or like when uh when the the gay guy wanted to come back he wanted in he goes I want in Tony I want in so I would send him that clip oh God he would have respond I must have sent him like 30 Clips mention in the comments who videos yeah if you if you think you know who it is mention in the comments who you think it is sure shout out Lauren shout out Runway slav I’m sure they know who we’re talking about Runway slav is going to figure it out he he’ll know um let’s get this train back on the tracks what are we drinking so we’re drinking a Savon Blanc from the town of can C in the lir valley in France also an organic wine and it’s made from Savon Blanc 100% And it’s 2 years old I wouldn’t have known this SV Blanc so I get I get the sav Blanc on the nose H yeah you do you get the green bell pepper there right I love saon Blan I’ve come to realize that the I wouldn’t be tell on the on the taste yeah the acidity is there the tartness is there m also get like green bell pepper on the nose you got like that that sort of grapefruity note mm and this is from France you said yeah and it’s the town of cani or Quincy in the L Valley there is there malotic fermentation this no it’s just been it’s I opened it two days ago that’s why no this is not smoke it’s a little bit of smoke you probably get it from because what they do is they they put they burn Twigs next to the vines a lot of the time to give it that Smoky characteristic that fume Blanc that you talk about in California that they’re trying to emulate from the L Valley that they’ll literally burn like the lawn waste like the when they manage the the growth growth management they’ll let them burn whatever is um whatever lawn waist is around next to the vines to give it that taste and also it works as like a natural pesticide too cuz the bugs hate the smoke so smoke are they infusing carbon into the vine Yeah by are they infusing other [ __ ] from the smoke like whatever oils and stuff that they’re burning off uh I’m sure on some mic molecular level that does you know whatever Rin from the resin from the from the from the twigs and stuff and the leaves ends up on the berry skin but they remove it it doesn’t sit on the Skins per se for very very long at all because you’ll notice it’s clarified it’s basically Star Bright that was a very technical question for anyone watching but it’s a good one it makes sense and it’s fum Blanc literally means uh white smoke uh and it’s a style of Savon Blanc now some Savon Blanc does the Oak right this does not forar Blan but it’s been sitting on it’s been sitting open for a couple days I corked it of course I put it back in the fridge but um a lot of the um the real harsh uh mineral notes that were in it at first when I first opened it right out of the fridge it’s a completely different wine so this is one of those wines that if you have it on your btg list in a restaurant it only gets better and it’s it’s the acidity that lets it um that lets it stay fresher and it’ll stay it’ll maintain its flavor for a while so to add to that point if you’re buying wine you want to be weary of sampling coravent wines or wines that are open the day before yeah because they’re going to have a totally different approach as to when you just crack it open y um and those kind of questions I was asking Christian like is it malow actic fermentation is it seeing Oak those are questions you want to ask as a wine buyer because you want to know what kind of information to relay to your customer um they’re going to actually you know something similar and you want to have a response you want to know what the [ __ ] you’re talking about people people want to know how it’s made yeah now what is like more what are the legs on a wine like like how long can you have this open what’s rule with them Christian two days three days uh used to be in the restaurants I would say because of the Turn and Burn you can have it open for depending on the wine I would say three days tops sparkling wine has less of a shelf life even if you do use the champagne Stoppers but we mve through enough of it to where if it sat for more than two days two and a half days like if it had if it went more than three shifts I would just spill it or I would use it in uh to make vinegar for the kitchen or whatever it was for me personally with red wine I tend to have stuff that’s less extracted that there’s that has more um tanon to it so it can sit if I open a bottle of Bordeaux it’s good for a couple days say to answer your question directly three days tops I think I’ve had some sparkling chz fridge Barosa stuff yeah that’s good stuff that tasted good two weeks later is that right that’s amazing I for sure I was like this is going to be dog [ __ ] this is going to be terrible I just left it in the fridge to see what happened T it fine that’s great I think we covered it with a piece of foil we didn’t even have any champagne Stoppers that’s amazing yeah some nice thick cut bacon there you go that sparking FR is great y sucks for austral I mean yellow taale [ __ ] their whole thing up yeah so yeah and and the whole like you’re not supposed to grow wine in Australia it’s a [ __ ] desert right A lot of it is a desert um you have to pump in insane amounts of water it’s like having a pool in Arizona it’s just not meant to be there well what what about like savan Blanc from New Zealand New Zealand is great because it’s very green and it’s high elevation not as arid as no it’s a very Green Island it’s where they filmed Lord of the Rings or The Green scenes you know the the Shire scenes and all the mountain scenes yeah shout out uh I I had a plan to go out to New Zealand in Australia uh but Co happen so I couldn’t go but yeah New Zealand New Zealand great saon Blanc yeah fantastic from the North Island especially I really like this I really really like the saon Blanc out of New Zealand if it’s a good producer unfortunately you also have things like Kim Crawford and you have just these mega mega companies that make decent tasting wine are used to but now you open up one of these mass produced New Zealand sa blancs and you get that smell of eggshells and that’s sulfur they just douse the [ __ ] out of it with sulfur and dioxine because it has to come all the way across the world so they have to preserve the wine somehow so I understand why they do it but it still tastes like [ __ ] isn’t dioxine like one of those forever chemicals yes it is damn to uh to go speak about Yellow Tail I think we got to wrap pretty quick so let’s let’s do that in two minutes I’ve had um people come in like older ladies come in and like they ask if I have Yellow Tail like if you go into a supermarket okay but you go to a shop like this like where it’s you know we’re like 5ot by 10 foot there’s a tiny shop why the [ __ ] would we have yellow they don’t know they don’t know here you go okay this is like a specialty store right why the [ __ ] would Barefoot like come on poy we still get little a little bit of popu but almost those people kind of fizzled out we don’t get them as much one day you poy I papy I have papy poy have papy you do have a lot of papy I’ve noticed you got what four different kinds we have the 15 the 20 and the 23 we just sold the 10 year we just sold the 10 year two days ago and not for nothing this is my go-to spot for all of my fine whiskey needs you guys have cornered the market you guys have and a salute to you you guys are like the chambers wine of bourbon in New York City I don’t know of any other shop that has your cache and your selection and your knowledge and just professionally speaking it is impressive what you’ve done to carve out such a great niche in that very competitive uh sort of area so hats off literally where you’re sitting to the end of the store is whiskey mhm and Rare whiskey at that right for those of you at home that don’t understand this this is hard to find stuff like this is all unicorns if we grab all the other [ __ ] on top of there and we put it could probably fill another two shell to this point we’re almost half whiskey it’s crazy because when I first started working here people would say they would come in oh you have a great whiskey selection I go yeah yeah yeah but then like the more you learn the more you realize the more other shops I visit I go oh we I we do have the best whiskey selection I’ve seen pretty much anywhere which is you know pat on the you know pat yourself on the back for that but like it’s funny yeah yeah I know thanks and it at least every day if a whiskey cuz again whiskey people very nerd nerdy very like oh my whis they geek out about it yeah yeah yeah I’m one of them but like they’ll they’ll come in and they’ll compliment us yeah I know I went to a store by Joey’s house and I just popped my head in to see if they had any blants so I go hey to the guy you got you got any blons he goes yeah yeah right here right here and I was like oh [ __ ] I was look I didn’t see anything he goes he grabs a bottle of Jameson Jameson I go no Blandon no Jameson I have Jameson I go no I want [ __ ] bled like like an American whiskey not even American whiskey this [ __ ] sens why is this sense of going off so much man turn you boo like you wouldn’t know that it wasn’t Blandon that you were getting like You’ made the mistake Jon no you mean Jameson yeah J that’s funny have you guys seen the movie High Fidelity very long time ago Jack Black yeah yeah and John qack so like they play Like Music he holds the speaker he goes huh say anything So High Fidelity deals with a guy who owns a music shop who’s a music geek right so this is similar right isn’t like isn’t this the same kind of kind of vibe right it’s the three guys you know so it’s me anthon and Fez it’s like Jack Black John Cusack and the Bold guy which one was John black which one was I’ll be I’m Jack Black he’s definitely Jack I’m Jack Black your John Cusack is you’re like the boss and then the ball Unforgettable ball guys uh Fez Fez even though Fez I think is more rememberable than me but yeah it’s what it is so maybe to close up I can I have a suggestion I don’t know I used to do this at uh at pre-shift I would say so we had champagne we had white wine we had um two different kinds what was your favorite sip of the day I think I like the um I don’t know I really like the the orange wine mhm I really like the champagne though too I I I think I say the orange one is the best one cuz it had the most dynamic had the most interesting flavors to it sh had two notes to it I get that I’m going to say champagne was the best pairing for the the [ __ ] well that’s what I was going to say I was going to say the champagne because we ate fried chicken with it and that Pope eyes but the orange one I I a lot of different and I like I said I’m always a fan of sof blck they’re all fantastic quite honestly um I’ll go with the champagne cuz normally I don’t like champagne the champagne was good I chicken good I mean champ the Cy Blanc is good I think it just fell flat compared to the other two that smoke is Just Killer but also I’m a little bit more drunk when the sa Blan came out so I’m a little off the handle s BL is great that was good no I love it I love it so if I could have any any champagne my favorite sip was the probably I would say the the orange but the champagne is a very close second love Nicholas fuat I love that stuff I think it’s great value for the money the complexity in that wine the balance is just fantastic it’s like a miniature version of a kook I think it’s it’s got It’s it’s like got a similar structure and it’s what a fourth of price I got to have you at my next kids a birthday party I think uh I think people drink a lot more wine I was trying to shove it down everyone’s throat everyone’s like no no I’m like I was going to say you need another birthday clown no I need a birthday C well dress like Spider-Man you might have a heart attack but I need someone to drink wine with me over there not a problem well would we oh no we we pounded the Rio me you and dar a little bit but we fed the Rio I was surprised Dar was drinking yeah it’s good to see there shout out we should have him on the podcast not that he does anything not that he watches or likes he watches we shout out all our people that supposed to support us but yeah no one was actually I guess I’m a a sweet wine cuz I’m always like I don’t like sweet wines but then the the kabanka I like and that um benri is sick have you had that which one benri I think I sold out of benri Ben rier is the my favorite Italian dessert wine of all time that’s another I like theer wines I like the sweet wines what’s the one right behind you the one you bought the um was the the which one it’s one of those and tell me no the sraco that almost yeah that was delicious that’s always a crowd favorite yeah sweet your family dessert wines also Fantastic Model who was the one that we drank you and I wait a minute Anthony do you have a eem up there yes you have you have first growth sa turn yes son of a [ __ ] good price I haven’t sold how much is it two 250 that’s it 250 yeah but I mean In fairness I mean not a lot of people are going to walk in I guess you could sell it online that’s that’s the whole you know what’s funny you say that cuz I do get the customers coming in looking for crazy [ __ ] I had one guy come in looking for some uh some like pre-sale uh bordeau yeah so I had to like start looking for it and I got on the list thank God after I start asking so I should be getting it in the next what is he looking for I you asking me I don’t know I don’t want to [ __ ] butcher it to it talking are you talking like uh like you know 290 300 a bottle sweet sign me up I’ll get you some I’m in I’m all the way in on crazy crazy I love it um by the way to all all of you at home I don’t think everybody realizes just how difficult a balance it is to work within the constraints of a small retail space and have such a really well gated selection and something for everybody literally like no matter what your taste is in wine Buy somebody’s going to roll up here and be very very happy with their purchase when they leave now let me have some diet cola P cleanser you just said all that nice stuff P myself yeah I mean like like I said our whiskey selection our Maro collection um very impressive by the way I love your uh your Spritz uh your Spritz Builder section as I call it affectionately that MTI is the best my very favorite Spritz of all time is that MTI have you tried the ativo no it’s wine based yeah um almost all the outo Pista cafes have them okay so what is that like a vermouth kind of like it but it’s it’s like April competitor I’ll take it home I’ll take home a bottle absolutely you recommend it I TR One open GP which one the apptivo the new one from uh from Peter I think we crack One open if you want oh sweet yeah yeah it’s actually very very good nice even though I’m I’m now friends with the guys from AO and compari yeah one of the it’s funny Kari uh the head of Kari North America is one of my uh acquaintances through through the real estate goo super cool guy yeah but I and shout out to Kari Kari Spritz is my go-to normally but when I tried that MTI in Italy the first time and I when I came back here remember I saw it here and I went nuts I was like wow that’s it’s always sprits and clock in the summer it’s actually become a good fit for us because they got so much of the um the whiskey too oh yeah wild turkey uh Wilderness Trail I think is there’s too I’m not crazy about it I don’t want to you know be sucking anyone’s ass I’ll be honest the wild turkey the 101 is pretty good Christian grab a bot let’s crack it open all right taste it real quick I trust you I’ll buy it you got cups over there well I think you should have had it before everything but you know afterwards
