[Music] hello everyone i’m chef mike and today i’m gonna show you how you can make delicious fading spinach soup with mushrooms and feta cheese at home so i hope you’re gonna like it and let’s do it [Music] i start with easy spiny chips first i have to mix garlic olive oil salt and pepper and then brush some spinach leaves [Music] put them on silicone mat and bake them at 180 degrees celsius for around 10 minutes [Music] and chips are done [Music] next i have to start with the soup so i chop some onions and i’m gonna roast them little bit with olive oil [Music] next i gonna need one fennel side chop it and put it inside the pot as well [Music] i’m gonna season it with fennel seeds salt and pepper [Music] [Music] now is coming in one clove of garlic [Music] and the last thing is my favorite anchovies [Music] [Music] i’m gonna roast everything for few minutes and then put water in [Music] cook it until vegetable will be soft and then to double cream in [Music] and now it’s finally time for the spinach [Music] cook everything for few minutes blend it properly in the blender and delicious spinach soup is done i’m gonna need to make also fried buckwheat so i make my oil hot and deep fry some buckwheat in [Music] season it with salt and is ready for later [Music] next thing i need to do is poach an egg so just bring water to the boil make rear pool and put my egg in in a few minutes is egg ready i will put it inside the warm water so it stays hot for my plating now it’s time to start with the mushrooms so i will trim this shimeji mushroom first and then roast them with olive oil [Music] in meantime i’m gonna prepare some feta cheese [Music] i’m gonna season the mushrooms with salt and pepper and a few minutes they are done [Music] on the same pan i put some spinach leaves and season them with black pepper don’t put any salt guys because feta is very salty [Music] for the last few seconds i put cheese in and spinach will be ready as well now i just brush my egg with olive oil put some buckwheat on the top and i’m ready for plating [Music] start with spinach and feta cheese on the bottom [Music] then is coming poached egg with buckwheat on the top roasted shimeji mushrooms [Music] few fresh spinach leaves chips with garlic few fennel tops [Music] and finish it with amazing spinach soup with fennel and anchovies and this recipe was last in this kitchen so from the next one you can wait for new kitchen and hopefully better videos so stay tuned thank you for watching and i see you soon

I don’t have buckwheat, instead I used pieces of nuts.
But I personally don’t like Feta cheese it’s too salty. Are there any other alternative ingredients or should I put less feta cheese? 🤔

I made it, almost recreated everything faithfully, and it was delicious! As a beginner cook, I feel really empowered by this. Like, it seems I actually look like I know what I'm doing! But I really don't, lol. I rewatched this video as many times until I understood each step. And despite that I still ran into problems! I had to look up a few different videos on how to poach an egg, I had to poach 3 eggs and wasted like a whole box of them before I got 3 reasonable-ish poached eggs. It's truly an adventure when you lack the skills to do something, and you need it right now 😛 Surprisingly, the easiest method for me was to put it in a cup with hot water, put it in the microwave and pray :') The kitchen was such a mess, I've never seen it in such a state, I was a bit shocked.
Oh, and when it comes to knowing how much you exactly need of each ingredients, I noticed you can kinda eyeball how much you see in the video and think a bit of how much you want yourself and then just go for it. It'll be fiiinneee. At least, I hope it will be fine. Hope is an amazing emotion to have as a beginner cook, since I can't rely on my skills it's more or less the only thing I can rely on 😀
It was a beautiful experience and if I can do it, then so can you! Though if this is the first dish you're ever cooking, I do recommend to watch a Gordon Ramsay basic knife skills video on how to chop an onion and similar videos. But after that, you're all set to embark on this adventure!

I am a PhD in food science. This is the smartest spinach soup on YouTube if you want to keep a nice bright green color. First he cooks onions and after they are wilted he adds the cream. The cream neutralizes the acidic pH of the onions. If the spinach is added when the pH is acidic before the addition of cream, chlorophyll will go through pheophytinization to assume an olive brown color.

These recipes are brilliant, I gave this recipe a try last night with Tool's Lateralus album for the soundtrack. The anchovies were that necessary flavour note that adds the extra level. I served with potato cubes, ground pork medallions, and crumbled feta, all of which made for a surprisingly filling meal.
