I have fallen in love with “Spaghettoni”, I feel like Italians have been keeping this one quiet! Imagine “Spaghetti” but thicker, bolder, with more attitude and also more toothsomeness. This pasta really holds up as the backbone to the richer sauces like “Alla Gricia”, “Cacio E Pepe” or “Amatriciana” but I gotta say for me right now it’s all about the “Spaghettoni alla Carbonara”. Cacio e pepe is my favorite non-tomato pasta sauce. It's so flavorful and unctious. Also, it's super easy to make.
