aoia and we are at Gian Keri which is a
voto producer so we just got a great
tour of the operation right back there
all the oak barrels

here we are with Marcus and Jamie and we
are at Kary voto a familyowned
vinegar balsamic vinegar voto it’s voto
right so you’ll Ed it voto for over a
hundred years I think they told us from
1800s delicious and and I love that we
can get some of their products in Aroma
time but this has been a fabulous
experience they have vinegar here that’s
aged 8 years and 12 years and yet then
we had an olive oil that was 2 weeks old
so I just thought that was an
interesting contrast excellent voto is a
type of balsamic vinegar um you can’t
call balsamic cuz it’s not in the same
region but he
Giani um has been making his family been
making this vinegar Elixir um for GE 150
years um we’ve been using it at my
restaurant for since 2003 and I’ve known
about this product even before then and
it’s an amazing amazing vinegar Elixir
that’s uh you get a plane or it gets
infused with fresh local figs or lemons
or raspberries or strawberries or chili
peppers and so our group’s inside there
right now uh we just finished up the
tasting and we are purchasing some
product but back there is where all the
magic happens four years in Oak barrels
he now has an 8year and a 12 year and it
was a really cool process to see the
whole thing it’s 100% grape juice from
malasa and uh malvasia and negro Maro
grapes local grapes wine grapes that
they juice reduce by 80% so reduce it
down if they take if you have 10 gallons
it gets reduced to to two gallons and
then it gets fermented and Barrel aged
um really cool product let’s go inside

uh we bought the chocolate almond
vinegar so I think that’s going to go
over ice cream maybe and if I was
planning this trip myself if we were
were traveling um on our own I never
would have been able to visit or find
this place so it’s it’s really great
that we were able to experience this
together excellent so we met the owner
and his sister and they just really
treated us like we were family which was
beautiful
