Hello friends and welcome to the
southern Mountain kitchen today we’re
going to make Italian
[Music]
mushrooms so there’s really not a lot to
making this recipe it’s very easy
there’s not a lot of ingredients but
this is something that’s really packed
with flavor and if you get it done right
this is just going to be something
wonderful to add as a side dish if
you’re making some really kind of fancy
food for dinner or whatever so we’re
going to take a medium onion and we’re
going to slice it kind of thin cuz we
basically don’t want huge hunks of this
inside of our mushrooms but we do want
the onion in there and we just want it
to cook up really well and have very
thin pieces so we’re going to push that
all to the side now that we have that
cut up and then we’re going to take 8 oz
of mushrooms and again we’re going to
cut these kind of smaller but not
totally thin because one thing you need
to know about mushrooms when you’re
cooking them they will shrink so I have
8 oz of mushrooms you know what you
could do more than that if you wanted to
because once you start cooking these
they will cook down and you really don’t
want that especially if you want a lot
to feed like a whole family you probably
want to put more mushrooms in than you
think you need just to be on the safe
side to make sure that you know once
they start cooking down they don’t
Disappear Completely because they will
cook to nothing now mind you I used 8
ounces here and I was just feeding a
couple of people and there was plenty
for that cuz you could probably feed
like you know three or four people cuz
you’re putting this with other food cuz
you could serve this with anything from
you know like Italian chicken cutlets to
whatever um whatever you want to make
with it this is just a really great
thing to put to the side because it is
so packed with flavor and that’s the
best thing about it it just has so much
going on here for something so simple to
have such a lot of flavor but that’s
because we’re going to add an actual
seasoning packet to it so we’re going to
put in a saucepan one whole stick of
butter and we’re going to put this like
at a medium temperature cuz we want it
to melt slowly we’re not trying to grill
this butter to burn it make brown butter
we are not going that route now yes you
could cut this up if you put it in there
but it’s still going to take time to
melt so basically the best thing you can
do with this is put it in and just let
it do its thing on its own time so that
way once it gets melted it’s fine we
just don’t want this on high heat
because once you actually do it too much
you’re going to actually make it taste
funny this is Italian salad seasoning
which we’re going to add to this to give
it Flavor now the best thing about that
packet is it’s going to have so many
herbs seasoning flavoring and it’s just
so good when you add this to the
mushrooms with the onions because they
all work together to give you this
really great Italian taste that it’s
amazing when you eat it cuz you think
wow all that came from one packet now if
you go looking for one of these packets
you can find them generally in any store
I got mine from Aldi but I know that
they they have these at any grocery
store probably or even Walmart which I’m
not a fan of but if you go looking for
it it’s just an Italian seasoning packet
um if you have to play this back look at
the description on mine you see I’m
putting this into my pan and as this
butter is melting I’m going to start
mixing this through the butter to
actually give it that taste that we want
to go on to the mushrooms before the
mushrooms even hit here because the best
thing about this is as you’re doing this
slowly you’re giving a chance for the
butter and all the seasoning to kind of
marry together to give such a great
taste and it’s going to have time for it
to basically do its thing cuz sometimes
you don’t want to rush it and you know
it’s just one of those things where you
know I was like my grandmother was
Italian and she’s like you know
Americans are always in a rush to get
things done and when she was in Italy
they didn’t do that it was more a
relaxed thing and it’s kind of funny
that you know so I grew up in the south
on a side of a mountain with an Italian
transplanted lady who came in as my
grandmother and I’m like wow that must
have been a shock to culture to have
Mountain food and have this Italian
woman who married into a bunch of Native
Americans cuz we were all Cherokee um it
was always interesting in my house
that’s all I got to say so anyway so go
ahead and keep stirring this up until
this is completely done and when we get
this butter completely melted then we’re
going to add in the mushrooms and layer
them across the bottom and then layer
the onions on top of that so the best
thing about this is once you get this
butter melted and the seasoning all in
place the rest of it is just basically
stacking in in a pot and waiting for it
to cook so you know we just want to get
it to that point so keep stirring this
up a little bit more and then we’re
going to be almost ready to add in the
rest of the ingredients and like I said
this is such an easy recipe to there’s
really not much you have to do to it at
this point so keep
stirring now when you go to put your
mushrooms in we want to layer them so
it’s in a way that they’re just
basically not piled on top of each other
we just want to go around the bottom of
the pot to make sure that they actually
just stack around it and then once you
get them all in place and we just start
putting onions in they’re just going to
lay on top of that so it’s going to be
really easy to do so now you can see
this is all mixed together and we’re
ready to go ahead with the next steps
and once everything is in here we’re
going to reduce this heat down to like a
low to medium um and then we’re going to
let this cook for about an hour and that
way we know that the mushrooms are going
to be cooked through the onions will
soften up and be cooked and that’s the
best thing about it that is done you are
ready at that point to eat this so
that’s it’s really a wonderful thing but
as you can see I’m layering this across
the bottom and once you get yours
layered across the bottom then you can
actually put some on top of each other
but you want to get these as spread out
as possible so that way they cook evenly
and as this is simmering everything from
the bottom is just going to cook into
these
mushrooms and there’s going to be your
flavor it’s just going to have
everything wonderful in there with it
and that’s the best thing about this is
all that flavor packed into those
mushrooms with the onions so when you go
to put your onions on top just break
them up make sure that the Rings are all
separated as much as you can and it’s
going to look like a lot of onions on
top of this but it’s not going to be
when it’s done cuz this will actually
cook down as it’s going but like I said
if you’re trying to make this for our
large family you could double what I
just did here and that way you know you
could easily serve probably like seven
or eight people because this is meant as
a s a side dish not as a main meal um
although it’s really good to eat by
itself because I did do that one time
before myself and it turned into a great
flavor to have so see there’s a lot in
this Pan Once you put it all together
but as I said make sure that the
temperature gets turned down at this
point to where we’re somewhere between
like medium to lower heat cuz we don’t
want anything in here scorching or
overcooking or just totally not cooking
well and once your hour is up you want
to check it now along the way I would
check just to see how the onions are
softening up just to make sure that
they’ve cooked through completely um and
you know you can cut cover this and then
just make sure that you know everything
is doing what it should um use a spatula
move it around every now and then and
you’re in good shape with it so that way
we know that everything isn’t just
sitting in one place and it’s wonderful
and like I said the flavoring will cook
its way up through it and when it’s done
it will look something like this and
this is what mine was like when it was
done and it had such an amazing flavor
