Spaghetti alle Vongole is such a simple and easy dish to make, which is very popular in Italy. It is a part of the traditional Neapolitan cuisine and this is how we make it in our family. We hope you enjoy it as much as we do! 

Spaghetti alle Vongole (Pasta with Clams) Recipe: (Serves 4 people)

Ingredients:

1 lb. pasta (spaghetti or linguine)
Small hard shell clams (about 2 lb.)
2 cloves garlic (depending how big they are)
4 tbsp. olive oil 
1 cup parsley 
1/4 – 1/2 cup white wine (your preference)
Pinch of red pepper (optional)
Salt and pepper, to taste

Directions: 

1. Start by scrubbing and fully cleaning the clams. Make sure they are soaking in a bowl of cold water and after 15 minutes, drain them and put new water in the bowl for an additional 15 minutes. Total of 30 min before cooking. 

2. Make sure to have a pot of water on the stove with a generous sprinkle of salt, and bring to a boil.

3. Once the water comes to a boil, add the 1 lb. of spaghetti to the pot. At the same time, start making the clams. 

4. In a separate pan, add the garlic, olive oil, and red pepper. Cook until the garlic turns golden brown. 

5. After the garlic is cooked, add the clams and parsley to the pan. Cover this with a lid for a few minutes. 

6. Now, uncover the clams and add the white wine. Cook the clams until all of them are fully opened. Sometimes you may not need to add additional salt, but always taste and if needed, add some salt/pepper. 

7. Once that is done, remove the clams from the pan and put into a separate plate, leaving the juice behind in the pan. 

8. Make sure the pasta is cooked pretty “al dente”, because it will continue to cook a little more in the pan with the sauce. 

9. Once the pasta is added to the pan, add some parsley, and let the pasta absorb some of the juices in the pan. 

10. Plate the pasta, and add the clams on top. Also, add a very small drizzle of olive oil and a sprinkle of parsley (optional) to decorate. Serve and enjoy!
