bar within the Four Seasons Hotel I love
this mimo is rolling out some new menu
options that are sure to please and in
fact Chef that you say that these new
items are infused with the essence of
Tuscan Cuisine fill us in correct
correct first of all ciao everybody
great to be here thank you very much for
inviting me and yes we have launch a new
menu in mayo which is Italian authentic
food and slight influence in tan Cuisine
so we have a lot of new pasta you know
we have seafood we have fantina steak
you know a lot of meat brand new dessert
selection so it’s great you know we are
really excited to to have this new menu
I I mean I’m excited I’m I love every
single thing that I get at mimo
breakfast lunch or dinner um but what’s
interesting is that you’re new welcome
to the team
um and Nashville itself what you’ve
worked around the entire world so what
do you think you’ve brought into the
Nashville kitchen that you’ve learned in
all of the kitchens worldwide well uh I
I had a few opportunity to come to the
US in different city and I pick up
Nashville because it’s very vibrant of
course the for season hotel is brand new
so very exciting and uh the dining scene
here in uh Nashville is growing so much
and as well the produces that we can
find in Tennessee really excite me as a
chef you know okay like what well you
have so many farms I actually recently
wore clothes with a mushroom producer
micro herbs you know a lot of organic
fruit and vegetables so that we have
implemented in our menus so if you can
pass me some of the olives please oh the
okay okay syia Chef how many would you
like Chef go go five or six
great what are you making right now so
this is a pasta actually has Sicilian
influences which my father come from
Sicily it’s a macaron Chini with fresh
tuna okay yeah olives Capers
eggplant Tomatoes what would you like
yeah give me the tomatoes please Tom
okay very good we got doing a good job

do you what do you love about sharing
your Italian cuisine with people your
Italian culture well uh Italy like many
other countries you know eating together
is a great moment you know even when you
go for a espresso you know go for a
coffee it’s a moment of you know
exchanging uh uh socializing is great uh
great opportunity know and Italian food
is great very healthy uh very tasteful
you know so that’s that’s what I I
really enjoy a okay you know what I I
enjoy like I said everything on the menu
and I do want to showcase a few of the
things that you guys have at mimo I
think this is what is this yell it’s I
don’t know what it is but a Yellow Tail
also called amachi very good it’s a
sushi grade fish that we make a Crudo
also with the Sicilian influence a
little bit you know but we use a Tusan
olive oil and then what about this
fuka housemade I want to say too correct
house I’m going in for this I’m going in
for this um okay and you said you have
steaks and meats and things like that
can we get a shot of this and how it’s
looking so far yum yum can you get some
of the rocket and basil just dump it in
yeahum it in there don’t be shy okay
that’s

things you also have a wine event that’s
coming up correct yes yes in a couple of
days we have a Pont wine dinner with mil
Carlo next month also we will have a
uncle near whiskey dinner so we have a
lot of events at mimos okay and
throughout the whole hotel yeah a lot of
in things a lot of things okay we’ve got
