yes a standard Pizza do this you just
need
uh a little bit uh so this is d0 which
is like the top grade Italian stuff you
need yeast I’ve used honey to give the
yeast a chance to do a bit and a bit of
salt and then you end up with something
like that nice and shiny nice and
shiny so we’re only having half of this
cuz that’s all the other half will
save for
later so
yeah it’s just give it get some
uh little bit of
love so the style of pizza we’re making
today is called the grandma Pizza it’s
an American thing it’s cut in a
tray like
that
so obviously you D needs to fit in
there so this double
Zer it’s like a high gluten D so you can
just stretch it yourself you don’t
really need a rolling pin it’ll do it
itself when you
see the pizza oil there the make of the
very
nice see just does it
itself it’s dead easy to make it’s not
it ain’t rocket
science

out try not to swear in case you’ve got

so and then you’ve got your square pizza
now so just shake the dust off olive oil
only buy proper olive oil don’t buy
shite this is from Italy proper stuff so

tray you see that it need to come
closer that’s probably better is

you need
to see preparation you need pan of
boiling water you need your oven on full
whack cuz this is going to take about 20
minutes obviously you need some Basel
you need some flour you need some olive
oil again top quality pasta this is a
five or a go but at the end of the day
get what you pay
for right so that’s that yeah so we’re
going to put that in the
oven just blind bake it for 5
minutes cuz that’s how we
roll so in the
oven so we’ve got some of these left so
let’s make some dough
balls
so simp prate comrade how are you sp
so again just roll roll your door nice
and thin see
translucent you can see me see again cuz
it’s high gluten nice and
stretchy now this is mozzarella yeah
it’s absolutely
stupid
but my mad mate part me this says I buy

so that’s just add a quick 10 minutes
just to so the Bas is are soggy

mozarella put as much or as little as
you like of this

can when you think you can get cheap

so you need a
spoon so the grandma pizzas it’s meant
to represent Italy and the Grandma’s of
the Brooklyn in America they made this
pizza with the tomato sauce stripes on
it like
this now my Italian I go to in
Manchester well in DB near me the
uh I asked them about this and they
didn’t have a clue they said oh no this
is stupid uh not American uh not
American not Italian American so I said
okay then you want some Basel yeah
always tear it because then it releases
the
flavor so on top of your
thing and then just add look bit more
cheese say put as much cheese on this as
you
want right
oven this 20 minutes
this cuz it might look cooked but it’s
all about getting that base nice and
crispy which we’ll see when I pull it
out the oven so yeah that goes in the
oven
now again the oven is on top black so
you need it on full blast
and Bob she

it’s a Brooklyn New York thing where
the the grandma of the Italian immigrant
family that’s the pizza they made so
it’s it’s got a name Grandma pizza and
there’s also Sicilian square but if it
was Sicilian Square you’d put the Tomato
on first then the cheese this is done
the opposite way

onions so you need a pan just a normal

onions sausage meat anything just
wherever you can get it

that chop it

hello proper Chef in my country we make
a Dusty
explosion right top secret tip this is
called
vegetta it’s a Polish Eastern European
seasoning and it’s
20 dried
vegetables salt pepper bit of
MSG MSD means makes it good so about
that much sprinkle it in little bit
more and that’ll just bring everything
together so with this
now the vettas in the the pasta water as
well cuz your pasture will
sock the flavor of the water up as it
Cooks
so we’re liking the cooking videos are

so yeah sausage Ragu so
basically just let that Sizzle
away again CU it’s Italian you can put a
bit more oil in it
just helps it
cook so again with the salt because I’m
putting vetta in it you don’t need loads
of salt so at the end just salt it to
your personal preference
because I don’t really have that much
salt cuz I used the Jetta I never really
put any
in cuz the flavor is already
there and again the sausage meat will
have salt in it so that’ll be releasing
all that
the onions as the caramelize will be
making they be releasing sugars so
that’ll sweeten everything up as well
so
Grandma making me

yeah in like that
then I don’t use chat water because it’s
full of chemicals off the
government so just rinse it
out and you go Bobs you

all this in wo smoking somebody stop me

been going about 10 minutes I think

you’re cooking it in a tray it needs to
be full
blast so it’s on uh it’s on
260 C

now it’s done in about 8 minutes cuz
it’s it’s not fresh but it’s really high
quality so you look at this now it’s
caramelizing nicely which is what you
want caramelization is another word for
burning so we’re burning it

it yeah yes caramelization old chap is
when the when one Burns one’s

right pizza let’s get that

done yeah so Fe Pizza Oven on full
blast make a dough normally I do a 48
hour dough and then you get a nice nice
rise
there but for the purposes of this
demonstration we’ve done it with
the we’ve done it quick
but either way it’ll still taste

and then Blitz it all up and put beans

about 20 quid for four all nice

colors so what what I’ve made here is
probably enough
for two people
maybe three if you’re not a
fatty and then just put bit your night
your meat on the top like
that see there’s all that left so it’s
quite a
lot so that means we can have a bit
more yeah so drop of olive oil drop of
olive oil on your pizza drop of olive
oil on
your garlic balls
now food isn’t food without it looking
pretty is it so you want fresh Basel or
basil if you’re
American there you go
some bzel on top of your
pizza I did buy a Basel plant but it
kind of didn’t survive being outside all
week so yeah there you go
you think I’ll get a wife one day you
think someone will want to marry
me fat kid that can
cook clean your bowl
