Part of homemaking is creating fun times to look back on so it can be good to take opportunities to be in a different setting for making memories. We went to Bellingham to enjoy Whatcom falls and do a bit of shopping which resulted in a nice grocery haul. As much as it was nice to be away, there’s no place like home so I made an Italian roasted beef as a comfort meal

Arrosto di Manzo

1 3 pound roast beef
2 TBSP olive oil
1 onion chopped
3 cloves garlic chopped
1 roasted red pepper sliced
1 14 oz can diced tomatoes
1 cup red wine
1 TBSP cornstarch mixed with 1/2 cup water
salt, pepper and thyme to taste

Heat olive oil in a pan over medium heat. Sear roast on all sides. Set aside.
In the same oil, add in onion and cook for a couple of minutes. Then add in peppers, garlic and tomatoes. Cook for 1 minute more.
Transfer mixture to a roasting pan and add red wine, cornstarch water mixture, salt, pepper and thyme. Place roast on top.
Bake in the oven at a low temperature 275 degrees for about 45 minutes or so per pound…for 3 pounds I cooked it under 3 hours

  2. I always add a few pepperoncini, sliced, and let it cook with the tomatoes and onions, then dump all into the roaster, too.

Fell in love with Leavenworth and Whidbey Island… Speaking of Trader Joe's, I think you can probably get their things and food either directly from them or Amazon 🤔 The dinnerware is beautiful 😍

A friend of mine is having knee replacement surgery in May (😲); thought of making a baked ziti, garlic bread, salad and dessert, enough to last for a few meals or so; however, this Italian Roast may be even better, as they could eat as is, and have sandwiches later. Hmmm…I have to think about this and see what the cost of a roast would be. Maybe mashed potatoes, salad, veggie of some type, salad and dessert. Her husband and both adult boys will be there as well. Or this could be for another meal later in the month while she is recovering. Any other delicious suggestions?

Guess I kinda live vicariously thru you since hubby went into Hospice Home Care in December, I`m pretty much a pure stay at home caretaker now except walking next door to church on Sundays. So I enjoy seeing the things you share with us & of course your yummy recipes too! As always, thank you for sharing
