After years of battling a bad reputation, this fizz is coming back to our attention – and for good reason. Cava is made by bottle fermentation, exactly the same way as Champagne, unlike Prosecco, which gets its bubbles in a tank. Most cava comes from Catalonia in Spain and is usually crafted from a trio of Catalan grapes, macabeo, xarel-lo and parellada. If you’ve had your fill of Prosecoo, cava is an excellent alternative and is often drier than its Italian cousin.
