Chefs today we’re going to be exploring Pizza alalo which translates to pizza by the slice it’s arguably Rome’s best loved form of street food and it’s not to be confused with another favorite Roman Pizza classic known as Pizza Ronda the circular Kind and what better way to delve into the world of fresh tomatoes melted cheese and Airy dough than by visiting one of the best pizza spots in the whole of Italy Gabriel boni’s pizzario situated on the edge of prati just a 2-minute walk from chro Metro the
Michelangelo of pizza as our Lao born Chef is nicknamed established his pizzarium in 2003 and we have also been invited to learn about the preparation of boni’s unique contribution to Roman Cuisine by visiting his nearby Bakery so that’s his signature symbol wonderful and adventurous topping by the way if you come here uh to to visit and to try Bon cheese pizza the toppings change hour by hour and day by day beautiful AR jokes on a on a bed he also works a lot with seasonal
Ingredients right which is what Italians had to do in general of course we really pride ourselves on the freshness of the natural ingredients that grow at different times during the year so let’s talk a little bit about piz talion itself and how it works because this is perhaps a foreign
Concept uh Pizza alalo translates to pizza by the slice and typically if you were to hear the word pizza slice you might imagine a triangular shape from a round New York style pizza that’s not what we’re dealing with here this is well to the Roman Pizza I looks like so
It’s long and rectangular in shape and what happens is you select the pizza that you want you tell them how big or small you want the slice to be and what do they do they end up cut it and then they wait it because different toppings especially here have different prices

His own Gourmet Twist on them so Su are typically made with a resolt do right but in this case he chose to make them with p I mean how genius is that so what he does is he creates a carbona which is probably the best of the best when it
Comes to Roman Cuisine so when you cut open one of his Caron Su you have this beautiful egg y gual surprise on the inside and it’s so Innovative it’s so new in the beginning Romans were very suspicious of these unusual toppings that they were seeing on his piz alalo I
Think he was the very first to introduce truffle as you were saying or guinea fou or different seasonal products and hi quality cured meats this was not the pizza alalo that they recognized he’s known as the Michelangelo of pizza I mean I don’t think it gets higher than
That I think it was the New York Times that featured him as Michelangelo pizza he has his own episode on Chef’s Table on Netflix he’s always been famous but since the Netflix show came out the numbers here at this venue have boomed and I promise it’s going to get busy

Years old and he lets the do Ry for not less than 72 hours crunch outside soft inside full of bubbles so it’s it’s very light when you’re enjoying it so you don’t get full and you digest it very easily three days of rising time that’s incredible so I just want to pick out
Some of my my favorites I do love madella which is a beautiful uh thinly sliced pork sausage and on the base it looks like he’s using the Violet potato puree or perhaps it’s beet fruit I’m not sure so we’ll have to ask to confirm now he really does have this love and
Passion and appreciation for uh food in itself for agriculture his parents were farmers I believe and so he that instilled in him this love and passion for food in itself because that’s the key to any good food especially Italian food if you’ve got the good ingredients
There’s not much else to be done but of course his technique as he was saying is very particular very special that’s also what makes him famous I suppose because pizo typically is a little bit flatter and thinner when it comes to the to the base his you can see is a little bit
More substantial in terms of the thickness so they just mentioned that this pizza over here has pasta on the inside so can you see the pasta sticking out I mean this is just genius look at that so now comes the hard part which is deciding what to choose for today so
Either you eat it here at this venue on the little tables that they have outside or you take it to go and you eat it as you will wow as you can see the KE are starting to form a pizzario so as promised we’re on the way to the second

Is made with a cream of eggs pork Chek Pino ship cheese it’s great I mean this is something that you just don’t see and I think it’s glorious this one is going to be exciting to try Boni wanted us to try this special Pizza over here which is made with potato
Mozarella cheese truffle infused butter and an addition of white truffle on top wow how special thank you Leila look at this so this is a special Pizza that Boni asked us to try this is not pizza this is something else entirely it’s an explosion of flavors in your mouth it’s great so this
