As most of you know, I completed a food challenge in December. I called it Crock Pot December, and I challenged myself to make ONLY crock pot recipes all month long.

I am sharing with you one of my favorite recipes from the challenge. It’s affordable, fast, and easy. It makes a ton of leftovers for lunches or additional dinners, and it was also my son’s favorite.

RECIPE
12 oz fully cooked Italian-style chicken sausage, halved lengthwise and sliced
2 bell peppers, chopped
1 28 oz can diced tomatoes (undrained)
1 8 oz can tomato sauce
1/2 cup chicken broth
4 cloves garlic, minced
2 tsp Italian seasoning
8 oz dried ziti
1/2 cup fresh basil
1 cup shredded mozzarella cheese

In your slow cooker, combine the first seven ingredients. Cover and cook on low 6-7 hours or on high for 3-3.5 hours.

If using low, turn to high and dump in uncooked pasta. Cover and cook 25-30 minutes, Gently stir in basil. Top with cheese. Cover and let stand 5 minutes.
