INGREDIENTS:
4 chicken thighs (or use whatever you like)
¼ cup of flour
1 tbsp of butter
3 tbsp. of extra virgin olive oil
8 oz porcini mushrooms sliced
2 cloves of garlic chopped
1 tsp fresh rosemary
½ cup of balsamic vinegar (or less)
1 cup Chianti wine
salt & pepper to taste
PREPARATION:
Preheat oven to 400 degrees. Season Chicken with salt & pepper. Dredge Chicken in flour. Add Olive Oil. Brown chicken on both sides. Remove chicken from the pan. Add garlic, rosemary, and mushrooms and sauté a few minutes.
Return chicken to the pan and add the vinegar and wine. Let simmer for about 10 min. Transfer to baking dish to the oven allow liquid to reduce by half and becomes syrupy. We baked uncovered for 30 min, it could be less in your oven so make sure internal temp of chicken is 180 degrees.
