Continuing with the Detox January theme this week I’m making Easy Spicy Italian Baked Eggs. They are perfect for breakfast, brunch or a light lunch, and if you’re into healthy food whether just for January or in general they are super healthy too!!

If you’re cooking for a crowd they are really good because you make them the day before, keep them in the fridge and on the day just add the egg, Mozzarella cheese and bake, that’s it!!

They are so versatile you can really make them with anything you have laying around in the fridge especially left-overs meats or grilled veggies, sometimes I also add chopped black olives and lots of herbs.
