Ella cooks some really good pasta with Escarole and Beans. Yum!
Today we’re going to make escarole and beans canalone beans better known as white kidney beans um okay I already have my water boiling it’s not boiling yet but it’s going to be boiling soon and I have uh this is one bunch of escaro chopped you know very small like like pieces like
This and I have here about eight garlics two in which I’m going to crush and these I’m just going to sliver and just slightly Brown them not well kind of like golden in some olive oil for the end so you just make them like that Sliver and they go in here and you you can uh Brown These very very low and just keep an eye on them so that they don’t get really too Brown we put about uh half a cup of olive oil extra virgin is always better put that on low and just keep an
Eye on it from time to time now in this saucepan I’m going to put um about 1/4 cup of olive oil and I will chop up two crushed garlics oh my garlic flew away and I’ve already drained my canalone beans you just put them in a colander and you just drain them And then we take the canalone beans you’ll give them a quick rinse one can and they go in here not brown just cook them for about five to 8 minutes okay so this has been cooking for about 5 to S minutes you say they’re starting to like get like a little fried and
Softer now I’m going to add my escaro this is not Browning yet it’s not really doing anything I’m going to raise it a little bit higher cuz I want to get it started so here it is now be sure to wash this very very well well because
There is some dirt and sand in it sometimes and uh then you drain it and then it’s ready to go so you put it in here and don’t forget to add some salt and lots of pepper also you might want to add pepper at the end when you serve it
Okay it’s a little dry so I’m going to add a little bit of my hot water to it I don’t okay now my water is boiled so I’m going to Salt it and add you’re supposed to use a Yeti but I couldn’t find them so I am going to use
Shells um they’re not as good but these are going to cook about 14 minutes so I am going to put my timer on so I don’t forget about it and give it a quick [Applause] stir and then we see this stir this every once in a while now my garlic is starting
To go somewhere got to keep an eye on that CU you don’t want it to be too Brown and if this gets dry it needs some water you can take from your your your pasta water and and put it in there you know and it is salted so it would be
Fine now this escarole doesn’t take very long to cook this is done cuz it’s I mean I cooked it for about 4 minutes and now you see how it’s very soft take it off the burner so that you don’t overcook it and um let put it in the
Back off the burners this garlic is still it’s not really cooked the way I would like it but it’s going to get golden and uh then after you put your pasta in you just pour it on top it’s delicious okay this is what the um garlic should look like it should look
Like that and it gets nice and nutty and it adds a delicious flavor at the end so this is done I shut my uh burner off and it’s going to cook a while so really you should really just like take it off because it’s still going to cook
But you don’t want it to cook too much it’s still waiting on the pasta um I got um a ways to go shells take a long time to cook okay I’m draining my pasta now cuz it’s cooked it’s all cooked [Applause] take this and you go to your escarole and
Beans you add it all in mix it up good and then you’re going to take your brown garlic pieces and you’re just going to put it on top like that and that it smells so good with the garlic and that’s it and then we’re going to put it in a platter And serve It okay Okay so now we’ll put it in the plate and we’ll try it put some nice cheese on it and we’ll taste it we’ll see how it is M very very good well you should try this recipe was so easy and so very good for you well see you next time bye-bye

I make this exact dish except I boil the escarole for like 4 minutes before adding it to the beans. I find the quick boil takes more of the bitterness out of the escarole. I also use garlic paste to infuse the oil just because I don't like biting down on a big chunk of garlic. Just my way. Thumbs up.
I'm sorry but that banging on the pots constantly is so annoying!
Try a little sauce in it
You can use a can of chicken broth too instead of water I use bacon in mine I use a whole pound cut into 4 then I fry it half way then take out the bacon had my garlic cloves to the bacon grease then dump in my beans I don't rinse mine then iput the bacon back in and had the escarole and chicken broth and let it cook for like 20 mins use 2 cans of chicken broth you love it
