I like more of this dish is the taste of garlic and anes but especially that sort of silky smooth get crunchy texture given by the red crumbs this is a sicilian dish more common in the palmo area Northwestern Sicily I don’t think there is any other similar dish in the Italian pasta tradition

  1. I’m Italian too. Anchovies lose the fishy taste when cooked. There are several regional recipes that include them. A way that I suggest trying this dish for those that are intimidated is to let the anchovy completely dissolve in olive oil and a little bit of water (or white whine). It’s a quick process, you just need to gently break the anchovy apart with a wooden spoon. You’ll be left with all the flavour but none of the texture, and will actually give you a creamier result, too. It’s one of my favourite quick dishes to make.
    In culinary terms, anchovies are an umami bomb!

  3. Fresher anchovies are packaged without that tinned taste. Italy-dwelling family tells me fresh anchovies are delicious and different.
    Midwest USA- Smelt are tiny freshwater fish. As good? Can get frozen at supermarket.
