Hey all, I have this tray from Marcato. Used it for the first time last night and for the life of me I couldn’t get the dough to cut through. Tried it with different amounts of filling. I found the rolling pin just smushed the dough around more than it did cut it. Rolled my dough out pretty thin, any thinner and I think it would have torn.

Dough recipe was mostly 00 flour. Maybe I try something closer to 50/50 semolina?

Thoughts?
