Made with Few & Far Butcher Co. 100% Wagyu Beef Burger patties – now available at @HarrisFarmAU

Ingredients:
– 100g rocket
– 200g blue cheese
– 6 tbsp salted butter
– 4 large yellow onions, thinly sliced
– 2 bay leaves
– 2 tbsp thyme, finely chopped
– 2 tbsp olive oil
– salt and pepper, to taste
– 4 Wagyu burgers
– 2 burger buns

Method:
1. Begin by making the caramelised onions. In a large saucepan over medium-high heat, melt 2 tablespoons of butter with 2 tablespoons of olive oil. Add the thinly sliced onions, bay leaves, and a pinch of salt. Cook this for 1 hour, stirring often to prevent the onions from catching and burning at the bottom.
2. During the last 15 minutes of cooking, add the chopped thyme to the onions and stir well.
3. Season the Wagyu burgers with salt on both sides. Grill them to your preference using the 3-4-1 method: 3 minutes on one side, 4 minutes on the other, and then 1 minute on the last side. During the last minute of grilling, add about 50g of blue cheese to each burger to melt.
4. While the burgers are resting, butter the inside of the burger buns with softened butter and toast them.
5. To assemble, start with the toasted bun, add some caramelised onions, place the Wagyu burger patty with melted blue cheese on top, add a handful of rocket, and then cap it with the other half of the toasted bun. Enjoy!

  1. Well.. this is interesting.. I just found out that rocket is arugula that I have always wanted to try and never have! Also, I never know about tapping the three dots to get recipes! Great.. thank you😊

  2. Everything looks great, but…… pre-made burgers? 80% beef, 20% pork and you’ll have the best burgers ever. Add in some onions and seasonings for a real winner. I sometimes grind bacon for some extra wow.
