Campanelle Fennel Sausage Ragu with Creamy Tomato Sauce (Salsa di Pomodoro Cremosa)

Black Box Challenge, mystery ingredients made into a dish with @mercatodiluigi. Restaurants with Vancouver’s Italian favorites, Michelin recommended @askforluigi and @dibepperestaurant.

Ingredients:
• 600 G – Campannelle Pasta
• 350 G – Fennel Sausage Ragu
• 16 OZ – Tomato Sauce
• 1 Whole – Shallot
• 6 Clove – Garlic
• 450 G – Cherry Tomatoes
• 15 G – Fresh Basil
• 1/4 Cup – Grana Padano
• 140 G – Burrata Stracciatella
• 80 G – Parmigiano Reggiano
• 2 TSP – Red Chili Pepper Flakes
• 4 TBSP – Olive Oil
• 100 ML – Japanese Sake

Directions:
1. Cut 1/8″ slices of Shallot and Garlic.
2. Slice Cherry Tomatoes in half.
3. In a large sauté pan on low heat, add 3 TBSP Olive Oil, sliced Shallots, sliced Garlic, Red Chili Pepper Flakes, and sweat until translucent.
4. Turn heat up to high and add sliced Cherry Tomatoes. Sauté, and blister Cherry Tomatoes.
5. Add Japanese Sake (or White Wine), Tomato Sauce, a couple stems of Fresh Basil, Grana Padano, mix, cover, and simmer on low heat for 5 minutes.
6. Lift lid, and remove basil stem’s.
7. Transfer sauce into a tall deli cup, or beaker, at least 32 OZ.
8. While hot, add 1 1/2 TSP of Olive Oil, and Burrata Stracciatella.
9. Mix with a hand blender, until smooth and incorporated.
10. Cut chunks of Parmigiano Reggiano, add in a food processor with Fresh Basil, and process for the garnish.
11. In a large pot, salt water (until it tastes like the ocean), add Cook (raw for about 10 minutes), or blanch (fresh) Campanelle Pasta until al dente.
12. In a large sauté pan on medium heat, add 1 TBSP of Olive Oil, and re-heat Fennel Sausage Ragu.
13. Add Creamy Tomato Sauce, a splash of pasta water, bring to a simmer, and give it a quick taste to make any adjustments.
14. Add Campanelle pasta, toss, mix, and enjoy!
