But now a lot of these big influencers are charging money to be on their pages I don’t I I’ll never pay for advertisement that’s one thing I am proud of I’ve never paid for advertisement but a lot of people will like come over and then like oh can we
Get a free dinner or something like that so is that paying for advertisement ways yeah I I think but I know that it’s it’s worth more to them than it is to me it’s costing me the cost of the food and the labor to bring it so it’s cheaper than
Than what the dollar amount of the check and it is very effective marketing it marketing you know but it’s very shortlived right right it is very shortlived I will agree with that it’s very shortlived the the trendiness of it is quick yeah so I can tell you for my
Place we utilized everything we utilized people to come in and there are people who came in just for a free sandwich there are people that we came you know had we uh paid them to come in um you have to kind of weigh it out uh some people have millions of followers some
People don’t obviously we don’t want to be paying for everybody you know so how many followers does someone need to have to Warrant having them in your restaurant uh like where I pay them no okay uh dinner for two because you can’t have the one person well uh dinner for
Two is the starting for me now I would be like minimum 100K right you need to have about that’s what I was thinking and and I’m and I’m an amateur like this um when the shop first opened I was you know wasn’t as you know I wasn’t as
What’s the word like I wasn’t looking at that number as much if it was like 20K and up I was okay with giving them a sandwich that’s not dinner for two you know dinner for two at a full service restaurant is significantly more expensive than a sandwich but if someone

Replace all of that you have to wash all of that so then you might as well go Full Tilt and get them to dinner but for you I definitely would not do dinner for two for anything less than 100K you know that’s that’s my U every now and then

A topic I was just thinking about is how food trends change throughout the decades. I don't know what pro chefs think about it, but sometimes it gets brought up in media.
Like, on Kitchen Nightmares when Gordon Ramsay will visit old restaurants that haven't updated their menus in decades he'll make comments like "This menu is stuck in the 80s," and there are channels that have made videos talking specifically about how pizza restaurants change the kinds of pizza they serve and how they present themselves based on the decade, like how in the 90s it was all about putting as much cheese and pepperoni as possible on a pizza, the 2000s was about health-conscious and affordable pizza (mac and cheese pizza at pizza buffets, for instance), and nowadays the trend for pizza seems to be more focused on chicken and veggies more than on pepperoni and sausage.
One scene that sticks out to me is when Tom Hanks in Castaway returns to society to find that the food trends have completely shifted. So, he sees King Crab being served and he looks at it curiously and isn't sure how to engage with it. He just looks at the crab and you can tell he's thinking "What the heck is this and how do I eat it?" while everyone else is thinking "Wow. He doesn't know how to eat this very common food. What a tragic story," without realising that just a few years earlier they didn't know what King Crab was either.

I think the best part of culinary education (french culinary is soho) was the last part of it – the actual work at the shool's restaurant. It was fulfilling, RIP the school's restaurant. And not to praise my class but our food was head over feet better than any other time I've been there as a customer.
At least now we know that that "My Heritage" ad came from this episode. But it is great to see it being explored more in depth in this episode. As always, I am enjoying the podcast

I've yet to see the importance on if you were the dishwasher, do not let sharps through, wash by hand. I've cut my hand a bunch of times because the cook would just throw it in the first compartment sink. Then you get hey I need more plates or silverware, you cut your hand. In the pro kitchen, would you leave a sharp ass knife in the sink for the dishwasher?
That whole Asian vs US way of grocery shopping is something I never did understand. I'm from the Philippines and I stayed in the US for about a month back in 2018. I stayed with friends/family in 5 different states, and in every single house around 1/5 of the stuff in their fridge had gone bad.
