  3. Hello chef, it doesn’t relate to this video but I have a question no chef has been able to answer for me.

    When making a gel, how can you get it super smooth when you have such a small amount? Like 100g let’s say, I can’t get it smooth with a hand blender because of how little gel there is. Advice?

  4. Chef so I've asked myself this many times. What temperature do fine dining food is serve? Usually at restaurants we try to serve them as hot as possible usually steam coming out of the plate. But I've seen multiple fine dining videos and usually there is no steam. Should fine dining meals be serve at just hot enough, room temp? Body temp?
