My mother, Mary Teresa Damiani Vuotto was born in 1920 and raised in Bridgeport, PA USA. Her parents were from the Abruzzo region of Italy. The oldest of nine she learned to be a terrific caretaker and passionate cook. Making manicotti and sharing her recipe is one of my favorite ways to honor and remember her at Christmas time. Crepes (makes approx 36) Filling

4 eggs 3lbs. ricotta cheese
2 1/2 cups flour 1/2 cup parmesan cheese
1 1/2 cups water 2 eggs (add last if tasting)
1 1/2 cups milk fresh or dried parsley to taste
1/2 teaspoon salt pinch of salt, pepper
1 tablespoon melted butter pinch of nutmeg (or more to taste)
