Saturday Night: Aglio e Oilo e Peperoncino
It’s no secret I love making this, it’s just something about that damn silky sauce, that gustatory orgasm…
But it took practice, the first few times I made it, it was too oily, too spicy. The trick is to emulsify the sauce, think extra pasta water, and longer time keeping the pasta in the sauce (still al dente, but pulling the pasta from the boiling water very early to incorporate into the sauce).
Ingredients:
(YES, it’s this simple, and YES I know there’s no measurements because I eyeballed it all)
1. Olive oil (good quality extra virgin)
2. Garlic (I used a few garlic cloves because I love the taste)
3. Chilli flakes
4. Parsley (separate the leaves and large stems)
5. Salt to taste
6. Good quality spaghetti
Method:
(apologies to any Italians I may offend- I’m still learning)
1. Boil some water (and for heavens sake sure it’s salted). Once it’s boiling, add the spaghetti (and don’t you dare break it).
2. Put your pan on low to medium heat, add olive oil
3. Slice the garlic thinly (or crush it)
4. Add garlic and parsley stems as oil is heating up.
5. Some people may crucify you for roasting the garlic, but I like mine ever so slightly toasted.
6. Once the garlic just softens and turns golden, remove stems. Add chilli flakes
7. Make sure the pasta is just before the point of being Al Dente. Add to the Oil.
8. Add some reserved pasta water (AKA the tears of the gods) to the oil and pasta.
9. I found it useful to turn up the heat to max, as the boiling helps the oil and water emulsify
10. Once the sauce has thickened and pasta al dente, remove from heat
11. Add finely chopped parsley and mix
12. Serve immediately (or eat straight out of the pan if it’s late and you don’t like dishes)
13. Be ready to fend off family members who just want “a bite” (kitchen knife may be useful)
Anyway, that’s how I make it. I tried to stay as authentic as I know how.
