Cooking my way around Epcot World Showcase fifth stop Italy. I picked a recipe that they do in Epcot’s Italy called Gnocchi with spinach and Gorgonzola Cheese Cream Sauce. Here is the recipe;
Gnocchi
2 eggs
1/2 tsp salt
1/8 tsp pepper
1/8 tsp nutmeg
1 -16oz container of ricotta cheese
10oz of frozen spinach, thawed and liquid squeezed out as much as possible
1 1/4 cups of all-purpose flour
Sauce
2 cups heavy cream
3 tbsp white wine
1 tsp of brandy extract
pinch of nutmeg
2 oz crumbled Gorgonzola cheese
salt and pepper to taste
Beat eggs with , salt, pepper and nutmeg. Mix in ricotta and spinach and blend together. Slowly add the flour to the mixture until the dough is no longer sticky. Cover with saran wrap and leave in the fridge for one hour. After an hour bring a large pot of salted water to a boil. while you wait take the dough out of the fridge and divide into four pieces. Roll out each section into a long snake like tube about a 1/2 inch round. Cut the tube into 1/2 inch pieces. Repeat with all four pieces. When the water is boiled put the gnocchi into the boiling water. Gently boil until the pasta floats to the top of the water. remove and drain in a colander, and set aside.
In a sauce pan pour cream, wine, brandy extract, pinch of nutmeg and bring to a simmer. Once it reaches a simmer then remove from heat and whisk in the cheese, season to taste with salt and pepper. Toss the gnocchi in the sauce and enjoy!
