We are exploring Indian-Italian fusion with this ricotta stuffed paratha that you must try! So lets get right to it.
The Tools You Need:
Cutting Board
Rolling Pin
Measuring Cups and Spoons
Tava (Flat frying pan)
Spatula
Bowl
For the Dough:
1cup whole wheat flour
1tsp salt
2tbsp olive oil
3/4 lukewarm water or as needed.
1. In a large mixing bowl, combine flour, salt and olive oil and mix
2. Slowly mix in the water a little bit at a time until all ingredients are combined well.
3. If dough gets too wet, add some extra flour.
*You want the dough to be elastic but not too sticky.
4. Knead the dough and cover bowl with a damp towel and let it rest.
5. Divide into 4 equal golf sized balls and set aside.
For the stuffing:
1cup ricotta cheese
1/3cup sun dried tomatoes, finely chopped
10 fresh basil leaves, finely chopped
pinch of salt
black pepper
1/2tsp garlic powder
1/2 tsp crushed chilli pepper
1. In a medium sized mixing bowl, mx all of the ingredients together.
2. Roll out the dough on a lightly floured surface, 5 inches
3. Place one filling ball in the center and cover it with the dough.
4. Roll it out into a nine inch circle. Use the extra whole wheat flour to roll easily. Repeat until all dough is rolled out.
5. Heat the frying pan/tava on medium high and place the paratha on it.
6. Cook the paratha on both sides. Serve them hot with ketchup or sour cream.
