It looks good. I'll have to try it, as I do pasta with some kind of sauce once a week. I like to make a stroganoff type dish. Make pasta, drain, and plate (I use a bowl). (I suggest linguine or medium egg noodles.) Cut up 2-3 celery stalks into narrow crosswise pieces, and slice maybe half a dozen mushrooms. Saute the mushrooms in butter until they're done. Add half a package of a meat analog like Beyond Meat or Impossible Meat and cook it up. (If you use Yves Ground "Meat", it's pre-cooked and you're just heating it but the others need a few minutes in the frypan to cook.) Add the celery and sprinkle everything with smoky paprika. When the celery is bright green and still has some crunch, add sour cream. I like a lot, like half a container. Turn the heat down a bit and give it a good stir, then serve the stroganoff over the pasta, with some more paprika on top. (If you like, you could also have added garlic when you sauteed the mushrooms, and you could add salt & pepper at the table, but I don't. My goal is for it to be as simple as possible.) Serves one for dinner, plus leftovers for lunch. My childhood comfort food!

Gonna make this today! Agree with you on the peasant food, it's usually the tastiest, most filling, most economical way of cooking, and feeds the most people. So why is it called 'peasant' food anyway? It's normal food!!
