  1. My Mom used to make the for dinner but she scrambled the eggs. My Dad’s favorite sandwich out of the leftovers for his lunch the next day. Peppers onions and sausage on a crusty fresh Italian roll. Dad was a bricklayer in NJ. He was very popular on days with this lunch. Mom always put an extra in for sharing!!!

  3. I've been making this same breakfast for years. It's so wonderful to see a wonderful chef like yourself making this. I even do it for dinner sometimes. I just use different meat, lots of onion, spices, herbs, and, of course, eggs. I love watching you. YOU ARE AMAZING. ❤🎉

  5. You don't know how special this recipe is to Me and my Family, I have been making this type recipe/ frittata casserole since I was in my teens , It is such a great way to use up what ever you have left over in the kitchen as a Breakfast meal 😊

  6. Dear Lidia, I have been watching your cooking shows and YouTube channel for some years now and always I marvel at the quality of the sausages you use on each of your shows. Here in New Zealand, it is extremely difficult to source a sausage such as you have used today in this recipe as our sausages are far more processed leaving sausages a smooth texture and not coarse ground as you have here. Do you have a recipe that would help me to achieve a sausage meat with the same texture as the sausage you are using here, please?

  7. This is one of my favorite breakfasts but it’s good any time of day. My ingredients are slightly different but fitting to my likes. I tend to use bits of bacon or pepperoni in place of sausage most of the time. These days I’m cooking for one so my food is mostly re-packaged and frozen into individual servings. I’m not a fan of runny eggs so I generally scramble them before putting in with the meat and veggies. It’s certainly not as pretty as yours but I enjoy it. I think I’ll make some today. You always inspire me. Thank you.

  8. Mmmmm, my ideal breakfast!!! Well I've always been fascinated by how similar Mexican and Italian cuisines can be (even our languages). This breakfast dish here I believe is undoubtedly great! Us mexicans use the same ingredients, only we dice the potatoes down to little cubes as well as the onion and peppers, and for the greenery we use cilantro instead of parsley. For eggs, we whisk them up, pour it into the sausage and vegetable mixture and serve the final product scrambled. But I think I want to make my eggs just like your way! That individual serving at 7:08 is a beautiful looking presentation!

  10. I make sausage, potatoes, onions and peppers and always have the leftovers with a poached egg and crusty bread. So good.
