  2. I make focaccia at special holidays regularly, but mine took 6 hours and had an 90% high hydration rate. It rose and fell in the bowl, poured into a pan w/1/4 cup oil, and pressed with black and green olives, tomatoes, garlic, and more olive oil and rested for an additional for 20 minutes, then baked. Results: Super crunchy crust and deliciousness on the top. Dust with a mixture of parm and romano. Heaven! 🎉❤
