Pesto. Italy’s most famous sauce.
Ingredients
1 bunch of green basil
3 tbsp Pine nuts
50 gr Parmesan cheese
2 garlic cloves
100 ml Olive oil
Lemon juice to taste
Salt to taste.
Preparation process:
1. Separate the fresh basil leaves from the stems. Rinse well and pat dry with a towel.
2. Toast the pine nuts in a dry pan. They should turn golden in color. But do not overcook.
3. Grind basil and garlic.
4. Add grated parmesan cheese.
5. Top with the toasted pine nuts
6. Season with lemon juice and salt to taste.
7. Gradually add the olive oil. This will determine the thickness of the sauce.
8. Mix everything thoroughly with a blender until smooth.
