180g chicken breast
250g potatoes
200g tomatoes
3 cloves of garlic
50g evaporated milk
50g chicken or vegetable stock
salt, pepper, oregano, garlic powder, chili flakes
Start by peeling and cutting potatoes into cubes. Put them into a pot with water and salt and let them simmer for 12-15 minutes.
Meanwhile, flatten out the chicken by putting it into a zip log bag and smash it with something heavy like a pan. Season the chicken with salt, black pepper, 1/4 tsp each oregano, and garlic powder.
Prepare tomatoes and peel garlic and then chop the garlic into fine pieces.
Start by frying the chicken in a pon on medium heat for 60-90 seconds on each side until the inner temperature reaches 160°F or 71°C and then remove it from the heat.
Now fry the garlic for 20 seconds in some oil and then add the tomatoes with a small splash of water, close the lid, and let it simmer for 2 minutes. Press the tomatoes down with a spatula to release all the juices and add in salt, black pepper, and chili flakes. Add stock and evaporated milk, give everything a stir, and let it simmer for 2-3 minutes until thick and creamy.
Put the chicken back in for 20-30 seconds to bring it back to temperature and then plate the potatoes and top them with the chicken and the sauce, Done!

Lifehack to save a lot of plastic bags/money:
Put chicken whereever -> box it(yes, literally make a fist and hit it), if you don't like contact with your chicken, just add a layer of Frischhaltefolie(translator said "cling foil")
This method is no just cheaper(no expensive bags needed) but also trains hand-eye-coordination as well as muscle. Depending on how hard you hit it.
Serious question: My dietician told me that it doesn't matter how much oil you fry meat in if you're only frying meat and nothing else like vegetables for example. I thought this sounded weird but he explained that meat can't absorb the oil. He's a certified dietician so I'm curious, it still sounds unbelievable to me.

I'm s big fan of potatoes over using noodles.
I like the recipe, but the way you use the thermometer isn't the best. You should put the probe into the side of the chicken, and run it along the length- not into the top. Putting it into the top doesn't give you a reliable reading because the temperature is so different along the thin part of the meat, especially with a thin piece. When you put it into the side, you get a good read of what the average temperature is in center of the piece.

I can tell from the looks and the "physics" that your sundried tomatoes kinda sucked. There are orders of magnitude of deliciousness between them. The one from the supermarkt here tastes like sour cardboard, the one from the "fresh italian deli kinda place" is more like crack-cocaiine. I would recommend to find a good one and give it another chance. It is nor replaceable by cherry tomatoes. Well it is, but it turns into a fundamentally different recipe alltogether.
