Growing up poor, Mum used all kinds of jars for Jams and Pickles, but always the real cans for Mackerel and Lobster until Mason Jars took over and they are much better than the "paper lined" cans. We water bathed all that fish too, in a great big oval galvanized pot that fit over the two burners on the electric stove.
I'm canning up all my meat chickens this year and I got 21 pints of skinless and mostly boneless meat from the three largest birds. I don't can the wings and only chop the knob off the drumstick to make room and to expose the marrow to the process.

That italian saice is called Passata, it's tomato puree without peels and whiout seeds, you will find recipes online even through US-italian homesteaders. I made it and I love it!
Look at the Amish they can this way but the government gets involved and makes rules and companies get rich some pressure canners are over $300 crazy

I saw that documentary last year, bought a bottle capper, caps and started saving lug top jars. How did you like the old, giant pot over the fire in the yard? I remember they let their tomatoes age a couple of days before canning.

We need to find supplies like the bottle caps and cap machine, and also lids like Tanja uses, and many more items. It is hard enough to find the standard canning jar and lids some times. It would be great to have alternatives to work with.
I already save every thing that is glass. But sometimes need new lids.

We always used old large beer bottles. We reused them bottles for years and years and years. Being Italian, that was the way we did it.
Oh yes! I saw this video a number of years ago!!! It was sort of mind blowing to me at the time. It was my first introduction to different canning techniques and made me totally relook at the stats on safety and reevaluate how I looked at canning. This was THE video for me. I love it.
