Some people throw away the rind after using parmigiano-reggiano cheese. However, these rinds can provide an intense parmesan flavor to a dish. In this episode of POV Italian Cooking, I use these rinds to make a parmesan-flavor infused tomato sauce called Parmesan Pomodoro with some help from my wife’s team from work.
